COMMERCIAL DESCRIPTION
Fear and Trembling was Hill Farmstead’s first collaboration – a Baltic Porter brewed with malt that was hand smoked over maple wood by our Danish friend, and former colleague, Anders Kissmeyer. This version was a rebrew of Batch #4 in our brewery...and was aged for many weeks in stainless steel. As a student of philosophy and former resident of Copenhagen, it is fitting that our brewer named our first collaboration after Denmark’s great thinker: Søren Kierkegaard. All three contemplated absurdity, faith, and salvation while wandering the shores of the Baltic Sea…

Note: This is stainless steel fermentation, no barrel treatment (released 2013 and late 2015)

Boutip (6312) - Gatineau, Quebec, CANADA - JAN 16, 2016
Bottle: Poured a deep black color porter with a nice dark brown foamy head with good retention and some lacing. Aroma of roasted malt with light coffee notes is quite nice. Taste is a nice mxi between some roasted malt, light lactose notes with some nice dry floral coffee notes with light smoky undertones. Body is light with good carbonation. Great beer and nice balance to avoid the smoke notes form overshadowing the other flavours.

(On tap @ Warpigs HF Day, Copenhagen, May 12 2016) Pours black with a small tan head. Aroma of moderately roasted malt, caramel, chocolate, liquorice, earthy touches, light smoke. Flavour is moderately sweet with chocolate core, dark caramel, liquorice, light berry notes, slightly burnt and smoky, moderate bitterness appearing late in the sip with some earthy character. Medium bodied, soft carbonation, no alcohol. Smooth and fairly subtle with the smoke, a bit umami overall I suppose. Very pretty if rather restrained.

Une bière sombre de Hill est déjà un cpup de dés pour moi. Avec la mention ’smoked’ en plus, alord là... Je suis séduit par cette robe mince affichant des courbes féminines et affirmées. Belle coiffure beige pâle et éternellement tenace. Des arômes étonnement très fruités qui passent pour de la framboise. Je suis très étonné et de plus en plus curieux. La framboise, sans s’estomper, prend successivement les firmes du chocolat, de toasts rôties, de grains grillés suite à une longue germination. Ça me plaît beaucoup et ce qui me plaît encore plus, et que la fumée est d’une exemplaire délicatesse. En fait ça ne sent pas la fumée, mais le chauffé, ce qui est bien différent. En bouche le liquide est étroit. Le chocolat apporte une franche amertume. Une très agréable surprise que je revisiterai volontiers à nouveau l’an prochain.

Fles gedeeld door Benzai, bottled 9.13.16, 25 cl sample. Donkere kleur, kleine schuimkraag. Aeoma is zeker smoked, maar wel typische de "Amerikaanse" smoke en niet de nog betere Duitse rauch. Wel is de geroosterdheid prima jn balans, wat donker fruit erbij. Bitterheid komt van de mouten, wat rook er doorheen. Mooi in balans. Uitstekend bier.

500 ml bottle, shared by Werckmeister, thanks! Almost black color, brownish head. Aroma is roasty, dark chocolate, toffee, hints of smoke. Flavor is smooth, dark chocolate, coffee, roastiness, molasses. Very nice one.

yourefragile (140) - Washington, Washington DC, USA - FEB 27, 2013
750 mL growler. Pours a dark, clearish brown with a light brown head. Nose of smoked malt, cocoa, vanilla; more sweet than bitter. Smooth flavor of a rich porter that is complemented by the smoked malt and not overwhelmed by it. I liked Holger Danske but I’d think if that was too much smoke for someone, this would be an agreeable compromise with the fuller, richer body and sweeter dark fruit and cocoa like flavor.

Bottle (500 ml). Black with a small beige head and some lacing. Aroma is of smoked malt, caramel and slight sweetness. Taste is of smoked malt, caramel, some spiciness. Alcohol is completely hidden, it drinks like a 5% abv beer. Medium body. Slightly dry. Good carbonation. Nice balance which is hard to find in a smoked beer. Another interesting one from HF.

Minderbinder (3469) - Québec, Quebec, CANADA - MAR 21, 2013
Bottle 500ml. Pours black with almost no head (beige). Aroma is of roasted malt, smoke, sweet, nuts. Taste is of roasted malt, sweetness, smoke, sligth bitterness, spices. Palate: Good balance. Full bodied. Decent carb. Overall: Soft. Smoke not cloying. Drinkable, alcohol very well hidden.

deekyn (1459) - San Francisco, California, USA - APR 24, 2013
A- thick syrupy black, with medium tan head that dissipates to a thin characterless skin. S- up front are strong earth notes as well as espresso, caramel, vegetables and medium smoke. Dry and musty oak are also present. The end is more espresso and earth with some chocolate and mild alcohol. M- A medium dense but light body and good carbonation. Intense towards the middle with subtle ending. T- a bitter beginning with strong coffee, espresso and earth - some bittersweet chocolate to follow in the smooth middle. Smoke is quite subtle and more apparent towards the light end and coupled with little pepper spice, vegetable and caramel malts. Grassy and soapy hops start after the chocolate and flourish towards the end. ---Rated via Beer Buddy for iPhone

Lukaduke (3206) - Gray, Maine, USA - MAY 27, 2013
Draft at Hill 3rd Anniversary. Pours a rich burnt umber color with a finger of khaki foam. Roasty deep dark chocolate malts, dark plum fruit, touches of smoke and licorice. Long earthy finish.
