This rural quencher is imbued with an amazing bready wheat and yeast combo on which soar pear esters and citrusy hops, sculpting a complex session ale with herbal edges.
Further Personal Perceptions:
-A sheet of foam laces atop the hazy yellowish beige.
-The aroma on this one is redolent of a farmhouse Saison. Great yeast profile!
-This is not your typical Witbier at all; don’t expect any of the usual coriander seed and orange peel notes here.
-The fluffy effervescence made this even more drinkable.
-The spicy hop bitterness was leveled with the rest of the brew’s eloquent intensity.

Tasted on 2/6/15 from a capped 750mL bottle that I shared with the group. Pours cloudy straw with a huge thick head that very slowly recedes to messy lace. The nose is spicy saison, green apple skin, lemon pith, a touch herbal, very complex. The flavor is all of the same complexity, really great tartness. The body is fairly light with lively carbonation and a long tart apple skin and touch of spicy lemon peel finish. PhillyCraft (7231) - Philadelphia, Pennsylvania, USA - APR 23, 2011
Growler pour from Mike at the Ephraim event. Pour is a clearish blonde. Zero lacing and very bare head. Carbonation is very mellow. Aromas of belgian spicy yeast, bannanas, clove, apples, honey, pumpkin guts. Taste is herbal crisp, with coriander, orange peel, cedar, pumking, peppery lemon. Finishes crisp and delicious with a halloween aftertaste. Great refreshing witbier/saison hybrid from Hill Farmstead. They haven’t let me down yet. daknole (11049) - Scottsdale, Arizona, USA - MAY 26, 2012
Clear gold pour, white head. Crisp aroma, guava, saison yeast, wheat, soft spice notes. Flavor is a wonderful mix of saison notes and wheat. Lightly herbaceous hops, orange peel, wow. Just wow.

effervescent lemon, puffy large-bubbled white head, spidery lacing. Incredibly delicate nose is slightly spicy, wit-est aspect, grainy, doughy, and monstrously bright. Lemony flavor mule kicks with husky wheat, esters indistinguishably low, hazy dough end. Carbonation kicks ass. Stunning. 77ships (9828) - Antwerpen, BELGIUM - OCT 26, 2014
UPDATED: NOV 2, 2014 Obtained in a trade. Thx! 750 ml. bottle split by 4 @ “The Tasting formerly known as Mons RBBAG I (2014)”. Bottled on 07/2014. Hazy citrus with no head. Nose is citrus, lightly tart, brett, sour bacteria, very HF, unique mix. but not best possible one. Taste is straightforward, lightly sour, tart citrus, tad lactic sorbet, wheat, lemon drops, brett, strong wheat presence,… Low carbonation & very easy to drink. Quite lovely but overrated all the same as usual. Pailhead (6540) - Rochester Hills, Michigan, USA - DEC 1, 2014

Bottle: The aroma consists of big heavy citrus, orange peel, lemon, florals, and a touch of musty tart apple. It pours a cloudy dull orangish-yellow with a one finger white head that quickly fades to a thin film outlined by a slightly thicker ring. The flavor starts with a moderate-heavy tangy oranges. The finish has moderate tart lemon, must, and light florals. It’s light-medium with soft carbonation and mouthfeel. Overall, another super tasty Saison from Hill Farmstead.
I thought this was a very good beer. The nose is great and while the taste is a bit mellower and not as complex, it is very good. Well worth checking out. Christian (13670) - Odense, DENMARK - MAY 15, 2015
C4PAF pre-tasting. Hazy yellow with a lasting white head. Funky and fruity aroma with pine, lime, lemon peel, pineapple with funky and spicy notes. Dry, tart flavour with spices, herbal notes and lots of lemon juice and lemon peel.
