Stouts and Porters II. Big thanks to Bruce for this lovely beer. Opaque dark brown beer, tidy short lived tan head. Light coffee nose. Palate is soft, airy and dry. Light tangy coffee, madeira like dark fruits, mild malt cream. Supermild minerals. Finishes soft with a light touch of oak. Tangy coffee and dark fruits aftertaste. Unusual and well balanced. Really rather good!

Some deep, woody notes in the nose, hints of nuts, tangy dark fruits. Medium to big sweet flavor, rich and dry cocoa, burnt wood, light alcohol sting, perhaps some cherries and other tangy dark fruits. Medium to full bodied with fine, massaging carbonation. Warming finish, some earthy bitterness, creamy chocolate, burnt wood, earth, baking cocoa. Delicious, balanced, layered. 500mL bottle, sent from cstromberg (thanks a lot, Chris), pours hey black with a substantial foamy tan head. Aroma is very complex, with notes of rye, coffee and red wine barrels all surfacing about equally. There is a mild roast character as well. Flavour brings out the rye upfront, with subdued coffee and roasted malt notes, leaving fairly vinous notes on the finish from the red wine barrels. The barrels are not overdone, accentuating the other characteristics nicely. Age has probably greatly diminished the coffee. Palate is quite carbonated, often a problematic effect from barrel aging. Bottle consumed at THE stouts tasting part 2, thanks to Bruce. It pours opaque darkest brown with a small dark tan head. The nose is roasty, rich coffee, toffee, toasted coconut, vanilla, light tang, berry (particularly bramble) and dark fruit. The taste is rich roast, intense coffee, sumptuous fruitiness, blackcurrant, red grape, bramble, jam, tanginess, toast, nice bitterness, light ash, some acidity and warming alcohol with a rich, roasty finish. Bottle... Pours midnight black with a small, creamy, brown head. Decent retention. The nose is a warming, luxuriant assortment of fudge, coconut, roasted nuts and ethanol. Medium-bodied with a milky mouthfeel and lively carbonation. The flavor is intensely sweet, carbonic and acrid, featuring loads of charcoal and heaps of deeply-roasted coffee. Wood, coffee, rye and cereal cookies merge before fruit and wood take over this complex Barrel-Aged Imperial Stout.
Further Personal Perceptions:
-A sheet of foam protects the impenetrable darkness.
-The second half is particularly fruity.
-Mouthfeel is quite chewy, almost viscous.
-Complexity is out of this world, as usual for Hill Farmstead.
-A touch of chocolate adds even more depth.
-This is aging very well. Was very good when it came out, but it’s even better now a few months later.
500mL thanks to djrn2 on BA. Pours inky with higher, red foam. Tepid pour still generates a slightly overcarbonated head. Lacing is nuts- super coating, webby. Martian rust red color. Awesome. Nose is savory, a lot of black crayon, tar, and au poivre peppercorn steak. A lot different than expected. Moves to charred figs, dates, raisins with flashes of soy. Complex, keeps you guessing. Taste up front is stickier sweet with a longer peppery finish. Dense body is cut by higher carbonation in the mouthfeel. Fatty steak with caramelized figs/gorgonzola bitter cheese combo as it warms. But there is also buttery, melted French dark chocolate truffle. The Madiera barrel manifests as a sweeter grape and then richer dark fruits in both the nose and taste. It’s initial sweetness in the taste gets killed by tar, bitter chocolate, and bitter gorgonzola/bleu cheese with density. Bottle @ Stouts Tasting Pt II. Cheers to Bruce for landing this! The pour’s deep brown with a tiny tan head. The aroma’s roast coffee, bitter dark chocolate. Nice accents from the port barrel aging. Plenty of jammy vinous notes. The taste is chocolate-dipped dark fruit. Moderately spicy woody bitterness. Rich caramel and toffee. Port-soaked cherry. Slightly hot on the finish. Full body. Bottle, massive thanks to Al, we’ve been wanting to get after this one for awhile. It’s not every day I can get a 4 year old hill tick that is still holding up beautifully. A Friend said she was tasting amazing right now so we decided to dive in. Pours deep black with coffee head and light lacing. Damn that’s some de Molen roast, fudge, bitter coffee, espresso, cocoa, soil, saigon cinnamon, and dark fruit. Medium to full body. Lingers for days. Only a touch sweet and I’m sure the extensive aging helped out with that. Fire.
