COMMERCIAL DESCRIPTION
Mimosa began as an idea: a beer inspired by our obsession with citrus. We built a recipe comprised of our favorite ingredients: Local organic raw wheat, Citra and Galaxy hops, Brettanomyces, and a healthy addition of fresh citrus zest. After 8 months of conditioning in wine barrels with our resident microflora, Mimosa is now ready to be enjoyed. 19º Plato 500 icus 10% abv

Bottle shared with Alan, Bill and Frank. Pours hazy glowing orange gold with medium white head, awesome lacing. Notes of heavy saison bretty yeast, oranges, so much citrus and light sour flavors. Medium to fuller bodied. This is insane, so much dry bitter grapefruit. Alcohol is hidden well.

Huge thanks to Deuane for busting out one of his bottles for us to try at the last monthly tasting. Another long time HF want bites the dust!

A - Pours hazy bright orange with a beautiful one and a half finger tall white head, slowly dissipating down to a light film, leaving sticky webs of lace on the sides of the glass. Beautiful looking beer.

S - Smells of orange zest, woody oak, bit of wine spritzer, good amount of typical HF saison funk, dash of earthen mineral and some wet hay. Some of the orange has definitely faded away but it still smells amazing.

T - Starts off with a mix of earthen mineral, wet barnyard hay, light funk and oaken wine quickly being joined by the orange zest and pulp and some bready malt helping to back up all of the other flavors. Finish is pretty dry, not lingering for very long after the finish.

M - Medium-Light body with moderate carbonation. Smooth, juicy feel with some nice backing funky earth that keeps me coming back for more.

O - This has aged beautifully well. The fruit has definitely fallen off a bit but the fruity/funky yeast has made up that gap. I would have loved to have tried this one right when it came out as it is just marvelous right now. Thanks again for the share Deuane!

750mL red wax b1 thanks to oteyj. Pours a glowing, beautiful light orange to tangerine with a massive, rocky off-white buttermilk IPA like head. Huge retention and massive lacing. Nose is pretty much b1 Cuvée de Castleton with fresh pineapple, lots of fresh dough, quenching tangerine character a lot like Stillwater Barrel Aged Stateside. Hints of saltwater, big tropical Brett nose like Jolly Pumpkin Oro de Calabaza. Hints in the nose of paper and sweet Mayan onion. Even some mild orange liquor. Taste up front has a nice smack of clear alcohol moving to bready sweet rolls and Stillwater Stateside Saison dough and pineapple play off. Gets a little bland actually as I go through the glass. Some nice saltwater and grapefruit tanginess brings this one to life. I enjoy the refreshing quenching character of the aforementioned beers but the abv here just seems to detract and the actual substance seems secondary to the incredible aroma. Very slight lactic acid and flashes of saltiness make up the major flavor profile with pink grapefruit and tangerine. No acetic. I guess my only qualm is the high abv which is unnecessary. Thankfully it doesn’t detract very much. The way this beer was constructed and the ultimate goal of this flavor profile was practically a shoe-in for my favorite beer of all time. I still think it needs work, but it is quite excellent now. Hopefully Shaun tries to do this one again. ---Rated via Beer Buddy for iPhone

Appearance is hazy golden wheat. IPA head, impressive. Nose is grapefruit and citrus explosion. Some delicious brett in there as well. Yes. I wish there were a citrus fruit that tasted like this tastes. Grapefruit and orange and tangerine mixed with maybe ambrosia. Well balanced. Yeah, delightful.
