COMMERCIAL DESCRIPTION
Mimosa began as an idea: a beer inspired by our obsession with citrus. We built a recipe comprised of our favorite ingredients: Local organic raw wheat, Citra and Galaxy hops, Brettanomyces, and a healthy addition of fresh citrus zest. After 8 months of conditioning in wine barrels with our resident microflora, Mimosa is now ready to be enjoyed. 19º Plato 500 icus 10% abv

Sample from a bottle at DLD ’11. Pours a hazy yellow golden color with a medium sized fluffy white head. The aroma is orange citrus, hay, funk, Brett, yeast and some floral notes. The flavor has a great blend of the juicy citrus with orange zest, Brett, funk, hay, and hints of spicy hops. I was shocked to see this was 10%, it is too easy to drink.

Bottle 361 pours a clear golden orange with a large off-white head. Aroma of Brett, hops, bready dry wheat malt, and lots citrus. Very tart, strong hits of Brett, and oranges, with dry bitter hops. Very enjoyable!

750ml bottle shared with big thanks to Matt for offering up this rare beast! Pours cloudy orange with a finger of head. Nose is bretty, earthy dry wheat, rustic subtle citrus, funk. Taste is earthy dry malts, balanced fruity brett, some soft lemon and clementine, zest, barnyard funk, soft oakiness. Finish is dry bretty citrus, funky oak, body has nice malty creaminess and fluffy mouthfeel. A treat to try!

Pours a clean golden orange color with two fingers of white foam. Lots of citrus punch, with tangerine, citrus pith layers of wet vinous barrel flavors. A touch boozier than expected with some funky barnyard complexity balancing the creamy cereal malt backbone. Hints of vanilla, stonefruit and soft brett influence. Dry finish.

Bottle shared by Scott at the willblake’s back in NJ tasting. Poured a hazy bright yellow body with an average sized foamy bright white head. Aroma of cat piss, old rotting oranges, wet toast, some tropical fruit and funk. Medium body with a dry finish and soft carbonation. Flavor of lots of citrus rind, touch of litter box, spolied tropical fruit, funk and a touch of sourness. Good beer that really is like nothing I’ve ever had.

UPDATED: APR 25, 2012 Provided by Matt for our Hill Farmstead tasting, thanks Matt! Pours a cloudy tangerine with a half fingers worth of effervescent white head.  Nose is packed full of citrus and earthiness, does kind of resemble a mimosa. Flavor definitely resembles orange juice and champagne, it also has the earthiness of a saison...very tasty. Spritzy carb with moderate acidity, a moderate finish and mouthfeel. Pretty damn good beer, definitely unique. The orange character is so prominent here, enjoyed it quite a bit.

Pour at Scott’s saison tasting, big thanks for this. Pour out of waxed 750 mL bottle is hazy yellow-orange with white head, aroma has big champagne notes, lemon, vanilla, biscuit bread, nice wine and funky must, some citrusy orange with a hint of orange peel. Taste is orange, white grape and champagne, hints of biscuit, lemon, more white wine in the finish with a slight spicy note, fine carbonation and full on the palate.

Bottle at our summer Saison tasting. Crazy thick red wax was tough to get thru but managed with a sawzall and a blowtorch. Shared all around with the crew. Poured into my HF wine glass with a cloudy golden hue. Offered up tons of carbonation and an aromatic fluffy head. First whiffs were of a pretty funky brew for a saison - with hints of straw, citrus and orange peel on the nose. Flavors were bready and slightly herbal, with a citrusy / lemon tingle and a drying finish. Soft on the palate. Very nice summer brew and a treat to try.

Thanks for sharing this, Joe. Pours a hazy yellow color with a tall white head. A really nice tartness of lemon on the nose. Plenty of wood, a bit of white wine, some peach, grapefruit, and a nice musty funk. The flavor is quite citric and has a nice tartness to it. Lightly funky and woody. White wine flavor, a bit of bread, straw, and a crisp, dry finish.
