Bottle shared with Leighton at Craft Islington. Colour hazy dark brown, off white head. Nose is deep sour berry, very light balslamic vinegar, crisp clean sour yeast. Taste is a brown sour but with awesome balance, big sour and blends into slight fruit. There’s leather, some dark fruit, chocolatey dark malt tones and then tartness. 37.5cl bottle, Steasy66 tasting at CBC Islington. Massive thanks to Leighton for initiating me to world of HF. It pours a dark brown bosy with a small tan head. Aroma is huge, complex and in your face, with strong vinous and sour citrusy notes. Red wine, wood, vanilla and funk. Great mix. Taste is similarly funky and sour with some woody, port wine notes. Medium bodied with good carbonation. This beer is tasty, complex and balanced. Plus is a mix of styles I love. Reminded me somehow of Oerbier Reserva. oteyj (2139) - New Hampshire, USA - AUG 11, 2013
Chestnut pour with garnet tints. Fluffy off white head. Vinous funk and dark fruit jam lead to bright lactic acidity and light oak character. Medium body with caressing effervescence and a super dry finish. Most struck by the complexity of funk. pours dark brown wirh a medium tan head. aroma has nice tart oak...vinous...some tart dark fruit and just a hint of booziness. Flavor is much more tart than the aroma suggests...pleasant soury/roasty dark fruit and lots of oak...wonderfully vinous and tart. Mouthfeel is light and the finish is tart/fruit/oak and dry.

Bottle again gigantic thanks to oteyj! Deep cola, dark mahogany pour with a fluffy off-white head. Nose and flavor are superb, with a gorgeous combination of dry roast, stunning vinous dark fruit, oaky dryness, and barrel-based funk. Complex, crisp and refreshing on the palate despite the richness of flavor. This and Tired Hands Guillemot make other dark saisons look like childs’ play. UPDATED: OCT 29, 2014 375ml bottle in a Hill Farmstead glass. Pours dark brown with a lacy, beige head. Aroma of funkiness and tartness, some light oak, and dark malts. Flavor the same with a lot funkiness. Average texture. Another incredible beer by this brewery. Edit: 10/29/14 Tried another bottle. Wow. Just wow. I wish the batch that was just brewed was spontaneously fermented, but I bet this next batch will also be great too.
