Opened on August 15, 2011. Held six months, per the brewer’s instructions. Consumed in celebration of PEH’s life, since he will likely pass tonight.
Pours a tar near-black with a pillowy three-finger head. Bubbles stream upwards toward the surface, revealing rust-red hues.
The appearance of Phenomenology of Spirit is quite at odds with the nose, which is prototypical of Shaun’s saisons in many respects. Somewhat floral, with a beautiful grassy and earthy brett presence. So clean and "fresh’ on the nose, even after these six months the bottle has spent waiting. There’s a light caramelized sugar note that plays alongside a hint of chardonnay/white grape vinousness. Brett’s the main motivating force here though.
Anonymous saison-like floral and earthy attributes on the front of the palate giving way to the "dark" elements of the beer: toasted wheat; dry, chalky chocolate; burnt sugar; subtle roast/pepper; and lightly-vinous dark fruit that lingers on the tongue. Quite different - while the transition doesn’t work perfectly for me, the brett has dried out this beer to a great enough degree that the nontraditional elements actually work quite well with the saison base.
Medium, medium-light bodied with good carbonation. Fairly dry; a hint of acidity on the long finish.
I’m far from a Hegelian, but I can appreciate the synthesis here. This is, unsurprisingly, a very nice saison. Once again, Shaun’s saisons tell stories.

Bottle shared by Brendan, Huge Thanks ! Pours a roasted umber color with a finger of eggshell foam. The nose is upfront charcuterie. Lots of salami, musty wood, earthy malts and some composted layers of fruit. The palate follows the nose with great carbonation, leather, vinous fruit, musty wood a touch of barnyard funk. The beer is chestnut brown and fairly hazy. Small beige head. The aroma offers oak, malt, fruit, wild yeast. Funky with Flanders characteristics. Smooth with low carbonation. Currants and brown bread. Really tasty.

Bottle via international trade; Dark chestnut brown pour with beige head, citrus aroma, tart fruit taste a bit of Brett action, very funky some roasted malt not massive but apparent, some remnants of vanilla.

Backlog, tasted on 08/13/2011. Bottle thanks to gn0sis. Pours dark brown, nearly black, pillowy tan head, nice lacing clinging to the glass. Fresh aroma, soft brett with sweet dark fruits, vinous elements, tickle of vanilla caramel on the end. Taste begins with a suggestion of caramel, dark fruits, transitions to roasted dark malts, smokey, light bitter hop finish, bright brett. Smooth body, pleasant and drinkable. 750mL bottle, sent from Glouglouburp (thanks a lot, Dany), pours a deep dark amber-tinged brown with a small beige head. Aroma is quite complex, bringing out notes of leather, slight roast, some oak barrels, wild yeast, and some mild fruity tartness. Flavour is similar, starting off with notes of farmhouse, sight roast, and leather, leaving off on notes of leather, brett and then some vinous tartness that becomes more pronounced the more you drink. The wine is not really that noticeable until the very end of the mouthfeel, become more and more apparent with each subsequent sip. Bottle from trade with MtGoat. Pours a near-black dark mahogany brown body with a big off-white head. Aroma is bretty wooden tones with dark malts, red wine, hints of citrus and straw. Taste is deep malts, citrus, bretty farmhouse notes, grass, hay, hints of straw and chocolate. Quite freakin’ delicious. Medium body, high carbonation. Clear deep red - brown beer, good pale tan head. Smooth palate, a little dry. Nice fine carbonation. A trace of dark and creamy malt leads seamlessly to a little sourish fruit. Riding alongside is a nice woody tone. Not overdone. Just a touch of vanilla oak. Finishes with more mellow sour fruits. All flavours in good balance.
