Copper brown pour, small beige head with minimal retention, no lacing. Varied malt aroma, biscuit, caramel, some darker fruit. taste leans toward sweet but not overly with mild hop bitter finish. fairly dry. Heavier malts come through in the flavour. higher carbonation, bubbly mouthfeel. Alcohol comes through a tad too much for me.

Bottle from Liquor Barn. Aroma of malts and fruits, cut nicely with alcohol from the sake barrel. Taste was overpoweringly sweet at first, but improved as the beer warmed a bit.

Bottle at the Spread Eagle, Ipswich. Pours dark amber with a small off-white head. Aroma of malt, fruit and veg, and treacle. Medium plus sweetness, light bitterness. Medium, slight oily texture, soft carbonation.

330ml bottle. Pours an unclear dark orange with lots of yeast particles floating around and a large, frothy, long lasting, beige head that laces. Sweet aroma of caramel malt, dried fruit, peach, apricot, orange, sake and a hint of oak. Sweet flavour of caramel malt, dried fruit, sake and oak with a dry, bitter, warming finish. Medium body with an oily texture and soft carbonation. Interesting.

Robe ambrée et cuivrée, trouble La mousse ne tient pas. Arômes malt, céréales, biscuit, caramel, alcool. Goût mielleux, biscuit, levure, fruits confits. On reste sur les fruits confits et l’alcool avec des notes de résineux et d’agrumes liés à une amertume présente mais bien équilibrée. La texture est légèrement sirupeuse avec une carbonatation très fine mais pas très abondante. Excellente.

11.2oz bottle: This one pours a hazy darker amber color. There was just a touch of an off white head that leaves no lacing. Interesting nose. Dark fruits, toffee and a hint of the sake. The taste is good, if a touch different. Caramel malts, faint dark fruits, a touch of sake. It has a faint sourness to it. This is good!

Aroma: Smoked, cooked rice, old liquor (brandy, rum, sake), ripe fruits (stewed orange, plum ?), toast, biscuit, volatile alcohol in the background ; Appearance: clear/sparkling dark red, minimal white head ; Taste: medium sweetness, then mild bitterness, followed by a salty sour feel, and (I’m not totally sure of it) a hint of what I think is umami ; Palate: full body, creamy texture, lively carbonation, warm, moderately long aftertaste. Overall a great beer, with a rich depth of flavours and a very pleasant complexity. This is however a somewhat sophisticated beer, not fully accessible to the untrained. I would recommend it with Stilton or old Laguiole (or similar cheeses).
