The first flagship beer in the Holy City arsenal is our version of a traditional Bohemian-style Pilsner, with significantly amped-up hops, imparting a wonderfully sharp bite to what’s already a dry, crisp affair. This beer will quench your thirst and please your palate all in one glass…but we bet you’ll want a second.

One of the better pilsners I’ve had recently. Aroma is spot on, noble hops are prevalent. Bitterness is not overwhelming and balances the malt well. Flavor is outstanding. Reminds me of being in Germany.

appearance: clear gold, small ring of white head. aroma: cereal grains, light honey, hint of grass. taste: big rainy toast, light bitter grass, pepper. finish: lingering toast, slightly dry, crisp palate. notes: One of the grainiest pilsners I’ve ever had. Very nice. Draft at the source.

From draft sampler flight at Holy City on July 22, 2016. Gold color with good clarity, good but not overdone pilsner sharpness in the nose, same with the taste. Refreshing brew.

Keg at the brewpub, 18/02/15. Clear golden with a moderate off white covering. Nose is pale malt, straw, light citric peel, vanilla. Taste comprises lemon rind, crisp malt bill, straw, citric peel. Medium bodied, fine carbonation, semi drying close. Ok pils.

Sampled on tap at Holy City, pours a clear gold with some tight white head. Nose has the expected straw and cracker notes, mild lemon, a little peanut skin thing too. Flavor improves a bit, clearer malt, lemon, yeast, straw, mild pepper. Clean finish. Just fine.

very good pilsner. Has a strong hop flavor that is not over the top. served from the keg at the brewery. excellent color and had a nice clean aroma to it that matched it fresh taste,

Keg @ Holy City. Golden pour with a modest white head. Light herbal hop on the nose. Summery meadow and hedgerow hoppiness. Taste is clean, slightly chalky. A bit of biscuit and white grape. Strong carb, deft. Good.

Draft at brewery. Pours a brilliantly clear light yellow with small white head. Nose is slightly catty and grassy. Taste is immediately bitter with almost no malt presence. Maybe slightly bready. Moderate carbonation. Very quaffable and quenching. Would drink lots in the summer.
