COMMERCIAL DESCRIPTION
High-abv dark farmhouse ale fermented in oak with Montmorency cherries and a mixed brett culture. Clocking in at 9.7% ABV, Tower of Babel was fermented in fresh red wine barrels from our friends and neighbors at Ward Johnson Winery as well as two second use bourbon barrels. The beer was aged for 6 months and then the wine and bourbon barrels were blended at the time of bottling.

Not getting much if any bourbon in this.
Smells of dark malts, yeast, cherries wood and funk. Flavor to match. Heavier body than most farmhouse beers but still hides the nearly 10% abv well.

Pours hazy brown with very low off-white head. Aroma is of fruits, vinegar. Taste is of vinegar, acidity, malt, fruits. Palate: Medium body, soft carbonation. Overall: Really not my style.

Bottle shared. Very hazy brown with a ring tan head. Aroma of tart berries, lactose, vinous, citrus and mineral notes. Flavour is light moderate sweet and above moderate sour. Medium bodied with soft carbonation.

Comment: Dégustation Manseau Automne 2016, Merci Tommy et les autres.


Portrait: Une bière qui est loin d’être belle avec une couleur d’étang. Un nez acide avec des brett et du chocolat. Une bouche sous le même registre avec du chocolat acide aux bretts. Correcte. Je ne vois pas les cerises.

Pours a hazy brown with no head and no lacing. Nose is of pie cherries. Taste is of cherries too and really acidic with some light chocolate in the finish. Body is medium, carbonation moderately high and the sharp/puckering acetic gets to you after a while. Why would someone want to brew a high boost "farmhouse" like this one is beyond me...

Fruité à la belge avec signature de barrique. Mise en place d’une acidité qui rappelle les bières sûres rouges. Petite touche liquoreuse en fin de bouche. Bien agréable à boire!

bottle at tom’s epic tasting 2016. pours hazy light brown, burnt orange tint, with a small light beige cap offering some retention and lacing. obvious cherries, wood, raspberries, cherry and plum jam - some sweetness, lots of spices. moderate carbonation, medium body - very oily; sweetish, winey, tart and spicy finish. nice bourbon-aged cherry tart ale. enjoyed.

2 ounces at tasting. Aroma: intense cherry, vinegar. App: murky brown, no head. Taste and palate: light to medium body, moderate carbonation, moderate acidity finish. Overall: kinda sour. Good but not so easy to drink.
