Bottle. Effervescent and lightly hazed honey-colored body with a fine white head. Very Dupont-like nose. Citrus fruit, sugar / sugar cookie, peppercorns and phenols. Hoppier and sharper and closer to the recent Cuvée dry hopped batch. There’s a difficult to identify aroma that’s something like orange juice pulp, aromatic hop cones and bathsoap... it really seems to be the key to why the aroma works so well here. Medium body with soft and creamy carbonation, lots of tart, dried fruits, a silky, creamy but frothy and filling yeast character with natural carbonation to give it softness. Astonishing tartness and dryness in a beer that seemingly smells sugary and fruity. Crisp, quenching acid, medium+ bitterness, low sweetness, good acid, quaffable and flavorful. Bottle @ home picked up at Wilbur’s Fort Collins. Pours a hazy golden orange appearance with a cream colored head. Spicy herbal yeasty, quite rustic, peppercorn, banana, lemon aroma. Lightly tart, peppery/chewy/bready yeasty, moderately dry, dull lemon citrusy flavor. A lot of dry, grassy, herbal notes. Fun to drink. sir__v (2630) - FRANCE - JUL 3, 2015
On tap @ Moeder Lambic Fontainas, Brussels - BE. Color: clear blond beer with small carbonation and small white foam. Smell: nice grain, rye notes and well balanced with grassy sour notes. Very nice! :). Taste: as the nose the balance is really amazing. Domination of the grain with a good expression of the sour notes. Finish as floral. Aftertaste: rye and sour. Saison finish. Doughy yeast, orangey fruitiness, bready cereals and a tender spicy, herbal hop personality thrive within the cushy rye-infused mouthfeel.
Further Personal Perceptions:
-A thick layer of foam laces generously atop the cloudy orange.
-The body’s creaminess is a bit overdone to achieve authenticity within its broad style, but it gives this brew a remarkable signature.
-From the nose to the aftertaste, everything exudes freshness.
-The hoppy finish sometimes personifies wet leaves.
-This is getting better and better; the bottle conditioning does wonders for the mouthfeel too.

UPDATED: FEB 5, 2011 au fût au vices et versa, belle bière ambrée, nez de seigle, d’épices très raffinée, en bouche les épices dominent, très agréable, finale longue et épicée.
Version bouteille: le même agrément, belle mousse blanche, une pointe mordante, très agréable.

UPDATED: SEP 1, 2013 On tap at Vice & Versa, july 19. Slight haze on this golden-orange pour, with absolutely no head. Nose is funky, lactic, apples and barnyard. Medium body, almost totally flat, nice lemony flavors backed by some funkiness but it finishes a bit hollow and sweet. Something milky, lactic in the end. Not bad, but would have been really better with some carbonation.
31st august update : tap at Bieres & Saveurs, aged version. Wow, what a contrast with my previous rating. Nice funkyness with light brett presence, body is thinner, dryer, than previous sample. Super interesting bretty saison character. Loved this one with aging!
