At just on cool. Produces up a cloudy yellow gold with just a few minute streams of carbonation. Big, bold and ripe, whole apple nose; mousy, powdery, subtley sweet and predominately earthy and raw with little inklings of plump berries, salted cheese and sawdust. Lots of fruit showcased on the palate. Sweet, plump and burrowing apple start, drying off as it heads south. Well conditioned, good bounce but not enough to dissolve the firm, meaty body. Peel, flesh, core, earth,oak and subtle peppery spice all in harmony to produce a balanced, well rounded and juicy cider. More fruitful as it warms. Deliciously long, alcohol amazingly restrained, possibly to the detriment as it is devilishly quaffable. Simply lovely. As if I need more reasons to visit Bridgetown!!
