Inspired by an ancient Mayan recipe, Ilkley Brewery has created an extraordinary Stout. It is velvety smooth, bittersweet, and has a subtle smoky fire in its belly. The Mayan is a Chipotle Chocolate Stout, dare you take it on?

UPDATED: SEP 17, 2017 My favourite stout. Also, the most unusual beer I've had the pleasure of experiencing. The initial flavour is bitter chocolate, before that makes way for the slight chilli heat. An excellent beer to warm you up in winter. Actually, just drink it at any time. It's superb.

(Bottle) Black colour with big, frothy, beige head. Malty, roasted nose with notes of chocolate, cacao, dried fruit, strong black coffee, dried apricots and a touch of chilli. Malty, roasted taste with chocolate, cacao, black coffee, dried fruit, some orange peel, burnt sugar and a sweetish finish with a mild cacao bitterness and some chilli heat coming through after a while. More than medium body, with smooth mouthfeel. Quite sweet. Interesting, with good chocolate and chilli flavours, but gets too sweet to be in perfect balance. Quite nice.

[9121-20170403] 330mL bottle. Roasted grainy aroma has a dusty spice. Black body with a medium-lasting foamy mocha head. Chocolatey roasted grains is initially quite nice and then a wall of chipotle spice hits out of nowhere. Full body has a hot spice background. Interesting, just a bit too hot for my tastes. (8/4/7/3/14) 3.6

2017-04-03. Black body with a huge foamy tan head that fades. 3++ Aroma of dusty dark malt, light roast, cocoa, chipotle. 7+ Flavour has moderate dark malt base, light cocoa and dusty dark malt. Chipotle spice character grows fairly quickly as you go. Average bodied palate with effervescent carbonation is thinner overall than my preference for the style. Okay, the chipotle is too prominent for me, or more specifically the base is not robust enough to support it. 7/4/6/3/13-14 Bottle from the LCBO.

UPDATED: MAR 5, 2017 Black- mahogany beer with nice thick brown head and lace. Bold Aromas of roasted malt, chocolate, chillis, and smoke. Taste is similar with the slight nip of the chipotle on the palate being more pronounced, and quite pleasant at that. Some sulphur is detected on the tongue, too. Excellent craft.

Bottle. Lost about a third to gushing. Dark black body, medium mocha head with ok retention but almost no lacing. Reach, velvety aroma of chocolate, condensed milk, licorice, cocoa liquor and vanilla beans. Taste of smoked mackerel, roasted malt, well done toast, dark vanilla chocolate and a pinch of chipotle. Very nice.

The beer gushed out of the bottle, so lost a lot of it and head disappeared quickly leaving no lace. Dark brown colour with ruby highlights. Beautiful aromas of chocolate, chocolate and spicy spices. The taste is pretty much the same with some coffee notes. A little oily mouthfeel. A very good chipotle chocolate stout.

This is a deceptive one. Pours inky black with a small beige ring. Aroma is big chocolate and roasted malts. Sweetness and lactose. Taste is sweet chocolate, light roasted malts, lactose silkiness. Seems all nice and right then comes the heat. I’m getting my drink on wondering where is the chipolte? Then the heat starts. It’s not overpowering but just a nice general warmth with some tickle.

Negra casi opaca, tinte rojizo. Espuma ocre poco duradera. Aroma intenso a chocolate, y notas de chipotle. Sorprendente en boca. Pica!
