""""For 30 days this honey-hued beer sleeps in hand selected oak barrels, locked inside a bonded warehouse, gradually assimilating the subtle flavours that reside in the wood. Barrels are then emptied and maturation continues for a further 47 days in a marrying tun where these natural flavours infuse and fall into perfect balance. This 77-day process is unique and produces a delicious, refreshing beer: Aromas of vanilla and toffee, hints of citrus, with a malty, lightly oaked, palate. Deftly balanced and light in texture, soothing and warming in the finish.""""

I seldom taste non-Estonian beer. This one is rather pleasant one. Nothing to complain about it has taste and smell to my liking.

BBD May, 2017. Pours a clear dark copper. Normal head volume. Somewhat poor lacing and retention, even for a cask aged beer. Outstanding light airy nose. Slightly sweet apple and pear are dominate. Underneath is a light touch of vanilla and soft caramel. While aged in oak, oak is only expressed in the vanilla notes. Light body with a smooth texture. World class carbonation / body balance. The middle is perfectly effervesced to allow flavor expansion yet not detract the palate with effervescence. The finish delivers a nice prickly effervescence that tingles the tongue. The flavor profile is outstanding. It tends to follow the nose but is not as sweet as was implied. It begins slightly tart then shifts to apple and pear in the slightly sweet middle. Mid-palate sweetness is bready more so than caramel in nature and has a subtle toffee note. Caramel is subtly there, but you have to look for it. Vanilla is somewhat masked but is noticeable under the fruit flavor, especially as the sweetness begins to fade. While absent in the nose, oak takes center stage before the finish and provides a light roughness that is slightly bitter. The finish is a slow fade of oak and the strongest vanilla influence. Diacetyl was not evident.

UPDATED: APR 11, 2017 A showcase for the flavors that long oak aging can impart, I&Gs original ale is malt forward with deep earthiness and toffee. A bit of mustiness in the aroma and tons of woody notes. Moderately sweet with a pleasant toffee fade. Pours honey brown capped with a creamy beige head. Plenty of lace. Not a complex beer, but well crafted.

Bottle into willibecher. Not very carbonated at all. Im a carpenter, so the familiar oak aroma is certainly evident along with the malty sweetness. Same with the flavor... Ive inhaled more oak sawdust than is acceptable, but thankfully Ive been retired for a few years and can enjoy it now. Not too sweet, not too fruity, well balanced and clean. This is one I could have a few of, if it didnt remind me so much of being back in the shop. Next time, Ill go for the rum barrel version. Good ale.
