The beer pours black with a light tan head that doesn’t rise much. The lacing and retention are poor.
The aroma is very strong with lots of sweetness, maple syrup, bourbon and some oak at the end.
The taste has similar notes of the aroma but the beer is so light feeling that it is distracting to the drinker. I want a fuller feel. It finishes poorly as well with some light bitter coffee which really reminds me of a week old cup of coffee.
Overall, the beer started out nice and I had high hopes. However, the feel and finish just destroy this beer. HonusWagner (2168) - Florida, USA - DEC 7, 2010
UPDATED: DEC 10, 2010 Found some notes.
Light touches of whiskey, slight creamed coffee, some bitter roast. Big problem is texture, extremely chalky. A huge disappointment, we tried a bottle of the Eleven later that night and it was quite good. vtafro (7445) - Wayne, New Jersey, USA - MAY 12, 2010
Draft @ NotB. Black pour with some tan head. Black coffee and lots of it, vanilla, oak, dark fruit, bourbon, and roasted notes. 11+BB= this Rciesla (5499) - Exit 15W, New Jersey, USA - MAR 5, 2010
Draft at EBF. I liked Ithaca 11 a lot. Pours a black body with a yellow off white head. Whiskey dry woody tones, roast y coffee beans but hardly vibrant and the body seems a bit thin and drying. Problem was that hot and sour once it got in your glass it just ruined everything and i think it was permiating the plastics of the glass, i threw that one out after this sample. j12601 (12000) - Poughkeepsie, New York, USA - FEB 28, 2010
Pouring at EBF’s Night of the Barrels. After trying the Eleven when it had just come out I wasn’t overly optimistic about this one. Pours a deep still black. Vanilla, sweet coffee, plums and prunes. Roast, coffee, chocolate. A bit sour and fruity, this was kind of weird, but still a lot better than I had anticipated.

Dark brown pour with a tiny beige head. Aroma is Coffee bean, a touch of cookies and cream, a some playful bitterness. Mouthfeel is really watery, unpleasantly so. Flavor is watered down as well. Light chocolate and bitter coffee grounds. A mediocre Ithaca Release that didn’t improve much with age. Disappointment dogfish120love (1331) - Westfield, Massachusetts, USA - FEB 20, 2010
Smells of hot peppers and chillies. It burns the nostrils just smelling it. The pour is a dark brown with absolutely no head. The flavor is very spicy. The body is rather thin. I’m not a fan.
