Bottle: Poured a pitch-black color ale with a large foamy head with good retention and some lacing. Aroma of roasted malt with light dry coffee, black chocolate and some very subtle peppers notes. Taste is also a mix of peppers, dry coffee with some black chocolates and some dry coffee notes. Body is about average for style with good carbonation and no apparent alcohol. Very enjoyable stout with plenty of flavours that are well balanced. I think a bit more pronounced peppers notes would have made things more interesting. Pour from a bottle this past new years eve. I really enjoyed the Weasel Rodeo when it was fresh. Great coffee aroma, taste of heavy roast and chocolate, followed by a great burn in the throat as it goes down. The heat was definitely not over powering or anything, which was great.
This last bottle had definitely fallen off in a big way. It kind of got muddled down into a chocolately mess, but the burn was still there which was nice. Aroma was of coffee - and potentially an embalmed weasel which I half expected to find in a bottle of this size. Big, bold flavors of coffee, malts and a kick of spice and peppers going down. However, I really didn’t enjoy this one for some reason (especially for the price which was over $20 CAD for one bottle).

Sweet coffee aroma. Very dark with no light getting through and no head. Carbonation was there but as an afterthought. This added to the smoothness of the beer. Creamy texture with higher than average weight. Predominant coffee flavors with roasted and smoked malts. The chipotle was not very noticeable. 750mL bottle, pours jet black with a small tan / light brown head. Aroma brings out complex coffee notes, chipotle peppers, and a touch of smoke. Flavour is intensely complex and rich, full of rich, complex coffee, moderate chipotle, and a little smoke. Silky, oily mouthfeel, dominated by the coffee and only accentuated by the chipotle a little bit. Wonderful blend of flavours, and a soft, silky palate. Froma 750ml brown bottle. Jet black pour, thin layer of beige head on top but not much else. Nose has rich chocolate and roasted malts. Taste is same with thick dark chocolate malts and medium roasted malts and dark coffee. Pepper heat comes out in the throat. Medium to full bodied, mild carbonation. A nice spicy Impy.
