COMMERCIAL DESCRIPTION
Back in February of this year, we added several hundred pounds of raspberries to oak barrels containing mature sour beer. We then allowed the beer to re-ferment to dryness. The result is Atrial Rubicite, our first barrel aged sour beer to incorporate fruit. Atrial Rubicite is made from well water, barley, wheat, hops, farmhouse yeast, native yeast from the Texas Hill Country, souring bacteria, and raspberries. It’s 5.8% alcohol by volume, has a finishing gravity of 1.005 and is 3.36 pH. It is unfiltered, unpasteurized and 100% bottle conditioned. Atrial Rubicite is our first beer to be packaged exclusively in 500 ml bottles.

Clear dark red color with a average, frothy, good lacing, mostly lasting to diminishing, pink head. Aroma is moderate to heavy raspberry, light tart raspberry, blackberry - redcurrant, sour. Flavour is moderate sweet and light moderate acidic with a long duration, tart raspberry, raspberry, redcurrant. Body is medium, texture is oily, carbonation is soft, finidh feel is light alcoholic. 50 cl bottle. Pours hazy red with a small pink head. Aroma is thick blackberry fruity. Says raspberry though. Tart, citric and fruity. Dense fruity and tart. Citric and smooth fruity finish.

Bottle courtesy of the Mad Fermentationist, thank you sir! Gorgeous bright red ruby color. Amazing aroma of bright fresh raspberries. For taste, my notes just say "wow!" Very glad to have tried this one, since I just missed it on a recent trip to the brewery. Mike said this tasted even better fresh, it must have been pretty spectacular.

Jack is back tasting at Bruce’s. Thanks to Jack. Semi opaque dark red beer, small pink head. Palate is airy and crisp. Mildly tart cherry and blackcurrant. Mild tang. Light dry finish. Tasty, if simple.

Bottle shared in London - huge thanks to jackl for this beast. Pours deep, clear purple-red with a frothy, off-white head. Gorgeous aroma, lots of heavy and juicy raspberries. Light sweet flavor, good tart raspberry, moderate acidity, some bitter berry pits. Light bodied with fine, spritzy carbonation. Super clean to finish, lots of juicy and fresh raspberry. Lovely.

Bottle split at Jackl tasting, thanks to Jackl, 06/03/14. Maroon with a thin crimson covering/spotting. Nose is tarte berry fruit, raspberry, woody, light rot, dank. Taste comprises tangy berry fruit, cherry skins, dank woody notes, blueberry, blackberry compote, light acidic pangs. Medium bodied, fine carbonation, semi drying close. Solid well balanced sour.
