COMMERCIAL DESCRIPTION
Back in February of this year, we added several hundred pounds of raspberries to oak barrels containing mature sour beer. We then allowed the beer to re-ferment to dryness. The result is Atrial Rubicite, our first barrel aged sour beer to incorporate fruit. Atrial Rubicite is made from well water, barley, wheat, hops, farmhouse yeast, native yeast from the Texas Hill Country, souring bacteria, and raspberries. It’s 5.8% alcohol by volume, has a finishing gravity of 1.005 and is 3.36 pH. It is unfiltered, unpasteurized and 100% bottle conditioned. Atrial Rubicite is our first beer to be packaged exclusively in 500 ml bottles.

Aroma is raspberry jam smothering a freshly baked slice of bread. Deep ruby red raspberry blood. The taste is another beast all together. Salty tart and crisp. The fruit lingers in a soliloquy of aroma. Clean palate. Sour at its best! Damn! ---Rated via Beer Buddy for iPhone

Draught @ Mikkeller Beer Celebration Copenhagen 2017 - Yellow Session
Pours deep amber with a pink head. Aroma has notes of malt, cherries, blueberries, tartness, funk and citrus. Taste is light sweet and medium sour with a long dry, blueberry, cherry and light tart finish. Body is light to medium, texture is thin to oily, carbonation is soft.

Thanks James for sharing this bottle! Poured into a snifter showing translucent purple wine red with sparse white foam. The nose shows tart notes of tomatoes. The palate is medium bodied and moderately carbonated. Moderatly tart with tart notes of tomatoes and brett on the finish. The raspberry is a fickle fruit to use in a better apparently...

Pours blood red with small head. Aroma: beautiful aroma of raspberries and cherries with a nice sour touch. Taste: nice sour, with cherries dominating and a touch of spices. Tart and dry in the finish.

Tap @ MBC 2017. Pours deep reddish with a pink head. Aroma of jammy raspberries, light funky, slight minerals, raspberry pits, note of leather. Taste is quite sour, loads of raspberries, barn and funk, very balanced. Good stuff.
