COMMERCIAL DESCRIPTION
Colour Five was brewed with Hill Country well water, barley, wheat, and hops. It was fermented with our unique mixed culture of microorganisms, which includes farmhouse yeasts, naturally occurring wild yeasts harvested from our land in the Texas Hill Country, and native souring bacteria. After extended fermentation and maturation in oak barrels, Colour Five was refermented with Texas blueberries over the course of several weeks. The final refermentation of the beer occurred in bottles, kegs, and casks. Colour Five is 7.1% alcohol by volume, 3.2 pH, and has a finishing gravity of 1.000 (0 degrees Plato). It is unfiltered, unpasteurized, and 100% naturally conditioned.

On tap at CBC Boston 2017. Comes a hazy reddish purple with a very small pink head. Aroma of fruit and funk. Taste is blueberries, fruit, and funk. Enjoyed the balance. Nice.

Thanks James for sharing the bottle! Poured into a tulip glass showing currant red with no head. The nose shows sour notes of brett and intense blueberry. The palate is light bodied and well carbonated. Strong blueberry forwardness throughout with notes of bretty funk in between and moderately tart. Very well done.

This smelled fantastic -- Brett funk (barnyard and hay) mixed with sharp acidity and some light blueberries. Its really tart, with an acidity that hits you and dries your mouth out. The blueberries add a lot of color, turning it a dark purple, and some drying tannins, but not much fruit flavor. Jester King makes some bold sours, and this is another example of that.

Unclear dark red color with a average, frothy, good lacing, mostly lasting, off-white - pink head. Aroma is moderate blueberry, dough, sweet malt, straw. Flavor is moderate sweet and light acidic with a average to long duration, tart blueberry, dough, sweet malt, straw, tart and sweet berries. Body is medium, texture is oily to watery, carbonation is soft. [20160514]
