COMMERCIAL DESCRIPTION
Funk and tartness abound in this dry, golden, “old” saison aged for months in oak barrels. Unfiltered, unpasteurized and naturally carbonated through re-fermentation in the bottle.

OG: 1.052 FG: 1.002 ABV: 6.5%
Water: Hill Country Well Water
Malts: Organic Pilsner, Organic Two Row, Organic Wheat, Organic Caramunich
Hops: Czech Saaz, East Kent Goldings and/or other varieties depending on availability
Yeast: Farmhouse Yeast, Wild Yeast from the Texas Hill County.
Bacteria: Lactobacillus and Pediococcus.

750 ml bottle poured a clear gold with a lingering ring of white foam. Aromas of straw, barnyard funk, lemon zest, yeast and white pepper. Palate was light bodied and crisp with a smooth dry finish. Flavors of straw, barnyard funk and lemon zest with a smooth dry lingering funky lemon finish.

[email protected] Slightly hazy yellow, small white head. Tart, spicey (is it coriander?) aroma, some grapes. Light to medium-bodied. Tart, citric, mouthwatering. Long citric tart aftertaste. Very interesting.

Pretty tasty beer. Light hoppiness and some spicy yeast esters. Mild tartness and a bit oc a lactic presence. I get a little spicy hoppiness. Funky and nice.

Pour on tap at GABF, hazy yellow pour with thin white head, aroma brought notes of big lemon, tart fruits, hints of grass, slight spice and yeasty notes, hints of oak, vanilla in there, touch of funky tones come through as well. Taste is a mix of tart fruit, lemon, slight grassy and spicy tone into some white fruits, some cracker, biscuit, touch of oak, finishing bitter, slightly tart.

bottle shared by mathieuc, many thanks bro! pours hazy golden orange with a nice off-white cap, good retention and strong lacing. fresh pils and lightly toasted malts, fruitiness-plenty, bursting tart fruits conveyed by light acidity and alcohol - apricots, oranges, lemons, spices, bit of dust, gently acetic, but also lactic - nice acidic profile, woodsy, very light earthy notes. bright carbonation, light body - oily, lightly acidic and herbal-grassy finish. awesome.

Pours a clear golden (at first) with a low white head that leaves great lacing. Aroma is funky, woody, fresh. When I say fresh, I mean menthol fresh and maybe even a touch of balsam fir. Nice hoppy notes here and there. Taste is lightly tart, fruity with a nice and light barrel touch. Some lemony notes. Carbonation is bright and this beer goes down way too easy. Great!

My Bottom Line:
Tart fruitiness tends to dominate this Barrel-Aged Saison, laying out zesty, citrusy notes over biting brettanomyces and blooming flowers.

Further Personal Perceptions:
-A sheet of foam settles atop the cloudy amber-hued blond.
-The cuddly natural carbonation makes for smooth drinking.
-The nose is rather wooden, with a few vanilla edges.
-The rusticity is subtle compared to the important acidity.

Bouteille 750ml, gracieuseté de SlovakSniper, Merci! Couleur orangée trouble, anneau de mousse blanche laissant une fine dentelle. Arôme de brett, étable, floral, abricot. Goût de brett, fruité, soupçon de vanille, plutôt sèche, acidité moyenne, boisé en arrière-goût. Carbonation moyenne-faible, corps moyen.

750ml bottle in a tulip. Pours hazy amber with a lacy, off-white head. Aroma of tart and funkiness, some pale and caramel malts, a little fruit, and some very light spices. Flavor the same with a little more funk than crisp, tartness. Average texture. A good beer, but it could be more refined.
