El Cedro, an 8.0% ABV farmhouse ale dry-hopped with Citra hops, aged with Spanish Cedar spirals and bottle conditioned with Brettanomyces yeast. It combines tropical, fruity hop flavor and aroma with funky, barnyard yeast character and the unique flavor and aromatics of Spanish Cedar. El Cedro is brewed with Texas Hill Country well water, 100% organic malt (Two Row, Carapils and Wheat), Millenium, Cascade, Columbus and Citra hops, farmhouse and Brettanomyces yeasts, and Spanish Cedar spirals. After primary fermentation with farmhouse yeast, El Cedro is dry hopped with Citra hops and aged for weeks with Spanish Cedar spirals. It is unfiltered, unpasteurized and naturally carbonated through re-fermentation with Brettanomyces yeast.

hazy golden with a white head - Good malts and hops that gives a citrus aroma - Good malt body with some sweetness and olos hop profile that gives a good taste of citrus - Hop and citrus goes into the finish - This was real good

Batch 2, jan 2013. At my place over an empty pool with group. Pours neon orange with massive massive bubbly head. Aroma is huge bretty, orange peel, big funk, big cedar. Taste, is cedar, zesty orange, massive brett, cedar. The hops are gone, and the cedar is a little less, Brett is huge. Finish is quick and zesty.

This is one of my favorites from Jester King and a very well done beer. Pours a hazy straw yellow color with white head. Citrus, brett, cedar, funk, light fruit, and some earth tones on the nose; follows onto the palate. Very complex, and medium bodied. Finishes dry with a bit of funk.

Une des bières les plus intéressante, travaillée et marquante qu’il m’ai été donné de goûter. À la première gorgée, on se sent transporté. J’ai fermé les yeux et j’ai cru me trouver en pleine pinède Toscane. L’une des personne avec qui je l’ai dégusté m’a même assuré en avoir rêvé après coup ^^

3/29/2014. On tap at the brewery. Pale yellow with a white head. Aromas of hops, yeast, Brett, hay. Bitter and tart with an oaky finish. Awesome beer.

15.02.2014. 0,75l Bottle. RBNG-14. Pale yellow colour with white head. Sour with noteas of stables and steap malts. Aftertaste is sour and medium bitter.

Clownoisseur (482) - Buchanan, Michigan, USA - MAR 23, 2014
Pours a honey colored gold, pillowed white head and some noticeable sediment floating in the hazy body. Aromas of strong peppercorn, wheat, light funk, bitter lemon and oregano. Taste is spicy (no heat) with pepper, orgenano, basil, cedar dominating the flavor. Nothing subtle about this. The hops are mostly lost on me. Very little citrus or funk peeking out across the middle or the finish. The spices only became more pronounced with each sip. Not my cup of tea.

Cloudy golden with a massive fluffy white head. Aroma is cedar, brett funk, freshly ground pepper, citrus. Medium-full bodied, nice balance of sweet, sour and bitter. Taste is ruby grapefruit, honey, pepper, cedar.
