COMMERCIAL DESCRIPTION
Farmhouse Ale Brewed with Lemons & Limes – Dry, well-attenuated, farmhouse ale brewed with the zest and juice of lemons and limes.

We are pleased to introduce Jester King Provenance — a series of three farmhouse ales brewed with different combinations of winter citrus fruit. The first of the three batches was brewed with the zest and juice of grapefruits and oranges. The second batch incorporated the zest and juice of lemons and limes, and the third batch used the zest and juice of tangerines and clementines.

All three variations are dry, highly-attenuated, authentic farmhouse ales, brewed with Hill Country well water, malted barley, malted wheat, hops, and fermented with a unique blend of brewer’s yeast, native wild yeast, and native souring bacteria. Their flavors are yeast and souring bacteria driven with the fruits serving as integral components of the fermentation. We don’t add fruit (or fruit flavorings or concentrates for that matter) to filtered and pasteurized beer at packaging time to make what amounts to a beer cooler. Rather, we incorporate the fruit into the fermentation, so that wild yeast and souring bacteria can transform the fruit flavors into something that’s greater than the sum of the parts. For instance, think about the difference between grape juice and wine. Why are the two so different from one another? It’s because the grape juice has been fermented by living microorganisms. We apply the same principle to the use of fruit in our beer.

Bottled batch #4 (03/29/17). Pours clear yellow, white head. Aroma is tart funk, musty, very barnyardy, damp hay, white grape, lemon, lime. Flavor is tart funk, lots of lemon, hay, saison-y, more barnyard notes, lots of lime, fairly dry for what I expected. Medium-heavy acidity. Nice, but not my favorite from them. It's not quite as tart and sour as I was hoping; more dry in the finish.

750ml bottle, Batch #4. Tart lemon citrus aroma with notes of lime, straw and saison yeast. Pours clear pale golden colored with a thin white head that has excellent retention and lacing. Starts with straw and saison yeast flavors with lemon and lime citrus in the background. Finishes dry and quite sour with lemon and lime citrus and zest that leaves quite a tang on the palate. Pretty good stuff.

Unclear - hazy matt medium yellow colour with a small to average, frothy - fizzy, good lacing, mostly lasting, white head. Aroma is moderate malty, pale malt, wheat, lemon, lime, moderate to light heavy yeasty, saison yeast, fruity, citrus. Flavor is moderate sweet and bitter with a long duration, tart, citrus - lemon, dry, zesty, saison yeast, lemon - lime. Body is medium, texture is oily to watery, carbonation is soft. [20151207]

From notes. Pour at Zwanze Day 2017 at Jolly Pumpkin on September 23. The pour is a nice hazy yellow color with a thick white head that slowly roils down and leaves a couple spots of soapy lace. I like it. The aroma is pretty good. It’s got a nice citrus lemon lime thing happening. There is a funkiness about it, and the only thing that comes to mind is that it’s like drinking an alcoholic, funky Sprite. The flavor is much of the same. It’s a nice bubbly lemon lime funkiness and carries a little yeastiness. There is a nice acidity to it, and just balances out on the back end. The mouth feel is lighter than I was expecting with a bright effervescence. The aftertaste is lingeringly funky and citric. I like it pretty good. 7 4 7 4 15

Pours a hazy yellow from the bottle with bubbly white head that dissipates quickly to leave light lace, but bubbly effervescence throughout. Aroma of nice light citrus, lemon for sure, maybe lime, lots of funk, mild wheat hay notes. Taste follows, loads of funk, brett character is huge, very mild acidity, hard to tell if it’s from the fruit or the bacteria. Dry finish, above average carbonation, bet this would age nicely.

UPDATED: AUG 24, 2017 What a gorgeous bottle. Pours with little head, hazy, but extremely effervescent in the body. Lemon rind and sourdough, finishing in yeasty funk at the end. Love everything about this.

UPDATED: AUG 20, 2017 Bottle purchased at Gomer's - who knew we could get Jester King here in Missouri!? Aroma 8 /10: funky, lemony aroma. Mostly funky though. Appearance 3 /5: light, slightly opaque golden color, but little to no head. Looks kind of like a green tea... Palate 4 /5: incredibly effervescent, full mouthfeel Taste 8 /10: Bubbly and effervescent with citrus zest and hay. Wild yeast funk is prominent throughout. Very slightly tart. Finishes a bit dry, almost reminiscent of champagne. Overall 17/20: this beer needs to warm up a bit - straight out of the refrigerator, it tastes thin and too much like champagne. However, as it warms up the wild yeast flavors really bloom. Final: 4.0

4/16/17. 750mL bottle thanks to djd07! Hazed golden orange pour under a nice rocky white head, holds even above the rim, laces like crazy. Funky tart aroma, loads of lemon lime, Smarties. Tart flavor, moreso funky, Brett, mild bitterness, dry, lingering lemon lime, Smarties. Tasty!
