COMMERCIAL DESCRIPTION
Pecan Wood Smoked Saison Crafted in the once commonplace, Old World tradition of bière de coupage, young, dry hopped ale is blended with old, barrel-aged sour beer fermented with native yeast. A portion of the malt was smoked over pecan wood at The Salt Lick BBQ in Driftwood, Texas. Unfiltered, unpasteurized and naturally conditioned.

Update: Our original label application for Salt Lick Pecan Wood Smoked Saison was rejected by the Texas Alcoholic Beverage Commission (TABC), after having been approved by the Federal Alcohol and Tobacco Tax & Trade Bureau (TTB). We have renamed this beer "Censored" for sale in Texas.

Appearance: Hazy golden color with a fine off white head. Ok lacing.
Aroma: Ok intensity.
Palate: Medium body. Moderate sweetness and a moderate acidity. Average carbonation.
Taste: Quite peat dominated.
Overall impression: Ok for my friend, a bit to much peated for my likings.

Visuel : Couleur : jaune. Apparence : voilée.
Arôme : Malt fumé, léger de levures fruitées (citron et agrumes) aux notes épicées, notes herbeuses.
Goût : En entrée de bouche : Levures fruitées légèrement acides (citron, notes d’agrumes et de pêche) aux notes épicées. Une dominante de malt fumé tourbée est présente avec des notes boisées et herbeuses.
En bouche : Corps : moyen-mince. Effervescence : moyenne. Texture : légèrement huileuse. Finale : moyenne, composée d’un goût de fumée avec des notes de levures fruitées et épicées.

Bottle 750ml. Pours hazy blond with low white head. Good lacing. Aroma is of smoke, peat, fruits. Taste is of smoke, bitterness, citrus, peat, acidity. Palate: Medium body, medium carbonation. Overall: Way too much smoke. No-brainer drain pour.

Pours a cloudy golden with a small white head that leaves good lacing. Nose is of smoked ham and bile (just a hint). Taste is of fruits, smoke and lightly tart. Average body and carbonation and mouthfeel is lightly juicy. A weird beast. Not sure I would want to drink more than this small glass but it was still interesting and not offputting to me.

Bottle (750 ml) shared at tasting. B1, 2013. Hazy gold with a small white head leaving little to no lacing. Aroma is super heavily peat and iodine forward and medicinal, the only other similar beer I had so far is Brau’Art / h.Ertie Lambik Peated Weizen. It completely dominated everything else and only some fainted lemon notes and herbal notes succeeds to come through. Taste is unsurprisingly very similar with very strong peat, iodine and medicinal presence alongside a rather srong salty presence and lemony notes. Medium body. Medium carbonation. Ever lasting peaty finish. It’s completely unbalanced, no doubt about it, but I found it to be fairly enjoyable (in small quantity). Of course, I totally understand why somebody would hate it. Original. Fun to try once and good luck drinking a full 750 ml of this alone.

Bouteille 750ml, bottle share. Couleur jaune dorée translucide, mousse blanche fuyante. Arôme de fumée, presque tourbé, malt. Goût de fumée, malt, un peu âcre, iodé. Carbonatation moyenne-faible, corps moyen.

pours cloudy light golden with a small white cap offering some retention and lacing. fruity peat, peach fruitiness, salt, herbs, light to medium acidity - relatively complex; star anise, other spices, herbs. moderate carbonation, light to medium body; tart, spicy and peaty finish. fairly peated with a spicy season character. enjoyed.
