COMMERCIAL DESCRIPTION
We’re pleased to introduce our latest beer: Jester King Snörkel — a farmhouse ale brewed with alderwood smoked sea salt and oyster mushrooms grown by our neighbor Logro Farms. Logro Farms is located just a few hundred yards from Jester King Brewery at Ceres Park Ranch. They use spent grain from our beer to sustainably grow delicious oyster mushrooms. We’re excited to have now come full circle by using their mushrooms grown from our spent grain to make a new beer.

Snörkel takes partial inspiration from traditional German Gose. Like Gose, it’s moderate in alcohol (~4.5% ABV), brewed with malted wheat and salt, and has some acidity or sourness in the flavor profile. We specifically used both sea salt and alderwood smoked sea salt, and fermented Snörkel (like all our beer) with a blend of brewers yeast, naturally occurring wild yeast, and native souring bacteria, the last of which lends the beer its acidity. But Gose only served as a jumping off point. From there, we set out to explore the savory characteristics of umami through use of the oyster mushrooms.

courtesy of Jérôme Rebetez - quite clear golden-blond beer with no foam left; aroma of cider and apple; lactic; sweet and sourish, light umami moderate malt backbpone; light salty and smokey, fizzy and very fruity finish, dry - complex, wonderful and deeply satisfying

Bottled; batch 5. Pours pale yellow, slightly opaque. Aroma is Tart funk. Earthy. More funky than expected for a gose. Flavor is funky sour. Earthy, saison-like. Not too salty. Okay but I've had better goses.

Draft @ Beavertown Extravaganza'17. Dorée, col blanc fizzy. Arôme au bouquet citrique, léger rétro minéral avec effet marin, léger élément de fumé tout en gardant l'approche un peu funk de Jester King. Palais est léger finement sour, citrique avec une belle pointe de fumé, et note de minéral voire de salin. Usage d'algue et en plus de les fumer est clairement unique, retrouve presque un effet terreux voire umami. Fumé plus fini citrique marqué.

On tap at Beavertown Extravaganza. Aroma is salty, briney, earthy with damp cellar notes. Taste has smoked grains with some lemony and briney notes. Quite well balanced overall.

Tap. Hazy yellow color with white head. Aroma is sea salt, fishy, oysters, wheat. Taste is salty, oysters, dough, peppery yeasts. Medium carbonation. One of the most ridiculous beers ever. (and why is this not a Gose?)

Keg at Beaverfest. Sour goseness with an all emcompassing tangy savoury hit. Opaque palest gold. Thin creamy white head. Light sour smothered by saly and umami. Medium bodied. Slick. Flat carb. Abrupt finish. Odd but moreish. I like.

Tiny shortlasting head. Aroma is slightly sour-ish fruity, sour berries, sorrel, hay, oak, soda powder, berry skin, orange. Taste is slightly sour-ish dry, sour grass, shed, horse blanket, hay, salt water, paper, weeds, fresh wood. Medium bitterness, slightly dry and watery mouthfeel. Fair enough.

Draft. A hazy yellow beer with a white head. The aroma has notes of salt, straw, and malt. The flavor is sweet with notes of salt, straw, and malt, leading to a bitter finish.

Cloudy yellow color, no head. Sour aroma, some odor, lots of citrus and salt. Medium to heavy salty, real sea salt taste but in borders of drinkability. Medium body, lively carbonation, spaekly, tingling. Very interesting. No mushrooms detected.
