COMMERCIAL DESCRIPTION
2016 SPON flor represents a curious case in our spontaneous fermentation program. The "flor" found in our sherry barrels migrated to some adjacent barrels containing 100% spontaneously fermented beer and impacted the fermentation. The result is a unique testament to the unpredictable and resilient nature of microorganisms.

2016 SPON flor was brewed in early 2014 using a turbid mash of 60% malted barley and 40% raw wheat, boiled for four hours with aged hops, cooled and innoculated overnight in our coolship with naturally occurring yeast and bacteria. 100% spontaneously fermented in oak barrels (no yeast or bacteria pitched), blended across the same vintage, and naturally conditioned for months in bottles resting on their side.

Bottle shared at Beer Temple. A bit unclear yellow color, small off-white head. Smell and taste lightly malts, wheat, sourish, sourish tart citrus, but with nice sweet peachy hints. Pretty nice! 7-4-8-4-15.

Bottle shared at Beer Temple, Amsterdam. Hazy golden light orange with a white head. Aroma has a nice slightly cheesy, meaty funk, leather, citrus, light peaches, oak and citrus. Flavour is above light sweet and moderate sour. Medium bodied with light carbonation.

Bottle at BeerTemple. Hazy golden color with white head. Aroma is funky, earthy, citrusy, woody. Taste is earthy, a bit grainy, lemony, earthy, rustic. High carbonation, quite complex. Good one!

Thanks James for sharing the bottle! Poured into a snifter showing well filtered neon yellow with no head. The nose shows moderately intense and moderately tart notes of sherry, nuts, and bretty funk. The palate is light bodied and moderately carbonated. Highly tart with light sherry biscuit notes in between bretty funk and subtle notes of horse blanket.

Bottle @ Dunkbar. Thanks to Orla , Rekvium and Vindueskigger. Pours Hazy Golden with a collapsing head. Slight fruit and acidic dry Bode and flavor. Tasty okay, But No Real complexity. Rather tame. Missing barnyard and funk.

Bottle. Pours hazy golden with a white head. Aroma of funk, stone fruits, citrus, slight vinegar. Taste is very tart, slight stone fruits, citrus, slight barnyard, citrus. Dry . Way to one dimensional for a geuze, this is a sour not a geuze?

Head gone in seconds over golden-orange beer. Sherry (fino), bit lactic, point of acetic. Dry sherry, horseblanket, straw, dried wheat. Lots of lactic acid. Light body, bit acidthinning. Aftertaste is rather empty; low carbonation. ’Interesting’ doesn’t come even close. Thanks, M & L V.! 9/4/8/3/18

[ As Jester King 2016 SPON Flor ].
Unclear matt medium orange colour with a average, frothy, good lacing, mostly lasting, white head. Aroma is moderate to heavy yeasty, barnyard, leather, farmyard, citric, grapes, lemon, wood. Flavor is moderate sweet and light acidic with a long duration, tart, faermyard, dry, grapes, lemon, wood. Body is medium, texture is oily to watery, carbonation is soft to flat. [20170510]

375 ml bottle. Bretty nose, grapefruit, lots of horse blanket, very dry. Hazy golden-orange color with lace. Flavor is grapefruit, some cheese, nicely tart with medium acidity, some lactic acid and sharp citrus flavor. Quite authentic, though not up there with the best from Belgium.

Many thansk to fonefan for handing over a big bottle at Himmeriget, shared with Skinnyviking. Next to clear golden body. Dissipating white head, dotted spots on the glass. Berry fruits on the nose, dry. Mixed taste of cheese and tart yeast fruitiness. Rounded mid-tart ending. Pleasing and refreshing. (Copenhagen 10.05.2017).
