COMMERCIAL DESCRIPTION
2016 SPON Mourvedre & Sangiovese is our 100% spontaneously fermented beer, refermented with Mourvedre and Sangiovese grapes. We took three barrels of two year old SPON from 2014 and one barrel of three year old SPON from 2013 (about 1,600 liters), and added 500 pounds of Mourvedre grapes from the Texas High Plains and 500 pounds of Sangiovese grapes from Colorado. We allowed the beer to referment with the grapes to dryness, then naturally conditioned the beer in kegs and bottles resting on their side. 2016 SPON Mourvedre & Sangiovese was packaged on November 28, 2016. It’s 7.0 percent alcohol by volume, 8 IBU, 3.5 pH, and has a finishing gravity of 1.001 (0.25 Plato). 2016 is our first ever blend.

Oxford tastings
Cloudy light amber color with no head, large bubbles. Aroma of cellar, funk, fart. Dry and tart, fruity, vinous, some raspberry, cellar, astringent in the final.
Good.

Bottle - Lots of funk and some light red berry. Cloudy orange gold with a small white head. Soured grape acidic, dry and light funk. Light cucumber in the finish.

375mL bottle, pours an opaque amber orange with a small off-white head. Aroma is full of barnyard funk, like a classic gueuze, with grape must. Flavour is quite dry, with lots of oak, wild yeast, and musty grapes. Bone dry and musty on the finish. Complex as hell and wonderfully balanced. Excellent.

Has a pinkish colour and a bit of pedio, and a touch of fruit. This is very tart, and with a fair bit of barrel. A wild character, with a nice acidic sharpness, and a touch of fruitiness. Complex, lots of character to this, nice sweet fruit, sharp acidity and dry woodiness. Really good brew.

Bottle. Pours a cloudy ruby with small off white head that diminishes to nothing. The aroma is strong funk, grape skin, oak. Vinous, very tart, nice funk, enjoyed this.

Tasted at CBC. Blended Nov 28, 2016. Poured a reddish tinted color with a thin sized head. Vinous, grape sour finish, subtle soft and all around nice.
