COMMERCIAL DESCRIPTION
2016 SPON Raspberry & Cherry is a blend of two year old, 100% spontaneously fermented beer, refermented with raspberries and cherries.

In 2014 we turbid mashed a grist of 60% malted barley and 40% raw wheat, boiled for four hours with aged hops, cooled and innoculated overnight in our coolship with naturally occurring yeast and bacteria, 100% spontaneously fermented the wort in oak barrels (no yeast or bacteria pitched), blended across the same vintage, refermented with raspberries and cherries, and naturally conditioned the beer for months in bottles resting on their side.

375ml bottle (thx, Carlos S.!) at Kump's during non-Belgian lambics tasting. Blended on 2017-04-21. Pours a murky purple with a rose head. Aroma is funky with lots of cherries upfront and after more raspberries. Similar taste, quite dry. Whoa, this one is really nice!

375mL bottle, pours a cloudy dark pink with a small pink head. Aroma is rich, with loads of rich cherries and raspberries, with a touch of pits, and light funk. Flavour is super rich, with heaps of cherry pits, rich raspberries, light funk, and a rather sharp astringency. The fruit in here is orgasmic. Wonderful.

Thanks James for sharing the bottle! Poured into a snifter showing hazy dark tomato red with no head.

The nose shows moderately intense notes of tomato leaf.

The palate is highly carbonated and medium bodied. Highly tart and moderately acetic with notes of light raspberry, strawberry and rhubarb throughout. Not bad.

Shelton 2017. Pours a hazy purple red from the bottle with bubbly pink head that dissipates slowly to leave moderate lace. Aroma of big musty funk up front with raspberry and cherry tartness behind, a hay like middle to support the fruit. Taste follows, fruit comes out a little bit more, but its not over the top, which is nice, and the funk is complex and layered, acidity is mild. It falls in line with some traditional lambics, but on the less exciting side. I would love to see how it progresses over time.

Sampled at RBSG at the hotel. In my plastic tasting cup was red with a white head with the bubbles tinged pink. The nose here is fruit, with cherry and beery being somewhat tart. Medium body. Flavor is big sourness with a healthy dose of the cherry and berry mixture. Finishes with light sourness. Very tasty and good,
