COMMERCIAL DESCRIPTION
This beer arrives annually to Ottawa in mid January and is gone before spring arrives. The style is Cascadian Dark Ale, also known as a Black IPA or an American Black Ale. The pitch black colour introduces you to roasted malt avours, but with a major hop presence you would expect from an IPA. At 6.4% and 76 IBU’s, you can appreciate this beer being described as bitter, strong and black. What the heck is a Wuchak? Wuchak is a term used by First Nations People and over time, wuchak was slowly transformed into the term - woodchuck. When you drive around Ottawa, you will often notice these groundhogs (aka woodchucks) popping up out of their burrows along the Queensway and the Hunt Club parkway.

Pours light black with slightly tanned head that dissipates slowly and leaves lacing behind. Texture is bit oily. Medium body with average carbonation. HInts of pine, but not overwhelming. Roasted malts, coffee and dark chocolate

Canned, from LCBO, Ottawa. Dark brown, mid sized head. Treacle and licorice up front. Mid sweet with medium body and clean, rounded mouthfeel. Treacle, salmiak and tar. Resiny bitter finish with some metal. Edgy.

500ml deep amber small head. Nose quite roasted with coffee. Burnt caramel. Taste burnt caramel roasted malts coffee. A bit thin. Not bad but a bit thin.

Can from Superstore. Clear dark mahogany with a creamy khaki coloured head that fades slowly leaving some patchy lace. Nose is roasted malts, dark chocolate and coffee with some pine resin lingering in the back along with a bit of vanilla and some fruit. Flavour starts a little sweeter than expected with a light+ molasses followed by a slightly more pronounced bitterness that doesn’t quite build to where I would expect it. Mouth is medium slick with slightly soft carbonation and a finish that is more sweet than bitter. 7/4-/6/3+/14

Cannette de 473ml via trade, merci Asheft - Alex. Brune foncée, presque noire, col café au lait assez épais. Arôme offre des effluves clairement orientées sur le malt grillé accompagné d’une fine note de chocolat. Le houblon perce en rétro et dégage des notes de fleuri et léger citronné. Palais est grillé avec un fini axé sur le côté poussiéreux voire de cendres. Caramel léger en rétro avec un houblonné qui reste plutôt discret. Ce dernier se caractérise par un fruité citronné-agrumes assez marqué voire une pointe de pin et léger résineux en fin de bouche.

LCBO can. Syrupy malty beginning, with dry finish. The ingredients are here, but the integration and flavour is lacking. Lots of lace.

473ml can. Clear dark cola body, medium mocha head with head with good retention and lots of lacing. Aroma of roasted malts, blackberry jam, leaves, hints of leather and some hops. Taste of burned toast, caramel, wood charcoal, pine. Well done.

Pours jet black with a huge brown head. Aroma includes notes of toasty malts, chocolate, nuts, and a hint of citrus. Tasting notes include burnt grain, dark chocolate, nuts, pine resin. The pakte is warm, and slick. The beer finishes with citrus bitterness.

A thin tan head on a dark body with a soft chocolate and cream nose. The citrus hops lead the profile and mix well with the chocolate and mild coffee elements. It has a solid body but the taste profile could have more depth to it. There is a touch of extra sweetness this time around, it seems.
