Taster at the Kiuchi Restaurant in Mito. Fresh, raw aroma, sawdust, alcohol. Sour edge is strong. Alcohol evident in mouth. Not at all sweet, clean, with lactic acid and a bit funky. Very interesting and different. Not sure why, but that black Koji makes it very interesting.
