Thanks Craig for sharing this. Pours a blonde colour with an amazing aroma of eggs, custard, vanilla, buttered popcorn, coconut, banana, sultanas, caramel and creme brulee. Similar flavours again with a brandy like alcoholic warmth. This reminds me of a weirdly delicious jelly belly combination, maybe banana, buttered popcorn and coconut? (Bottle) Pours pale gold with no head. The aroma holds boatloads of almond paste/marzipan, hazelnut, sticky honey, sponge cake, vanilla, light coconut, light cinnamon, mild barrel ageing, melted butter, amaretto, liqueur, praline, and syrup caramelized ripe banana. Not uber complex but mega super yummy. The flavor is light to heavily sweet and tiny acidic with notes of bitter almonds, honey, vanilla, cinnamon, banana, cake, barrel, liqueur and flowers. Bottle shared @ Oakquinox 2013. Clear pale yellow pour with a no carbonation. Huge cinnamon, banana, honey, and maple syrup aromas. Nice bourbon, honey, and very light hazelnut. The flavor is incredibly sweet and reminiscent of bourbon maple syrup. Nice spice notes of cinnamon, some hazelnut, honey, banana, and tons of vanilla.

Pour out of 330 mL bottle, huge thanks to Travis for the pour! Clear orange pour with no head, aroma brought notes of big notes of honey, cinnamon toast crunch, big vanilla, oak, slight bourbon that adds mostly more vanilla, graham cracker in there, this smells fantastic. Taste is spicy, cinnamon, ginger, hints of honey, slight earth into big vanilla, cinnamon cereal, hints of graham cracker, finishing sweet, spicy. Huge thanks to Vinny for making this possible. Poured into a Hill Farmstead snifter. Pours a still, clear golden body revealing a thick coating as the glass tilts from side to side. Aroma is ridiculous: at first it starts out with a rich toasted honey flavor, but as the mead warms, the banana and vanilla flavors really come out; coupled with the toasted character and you get an insanely rich, french toast-like nose. Mouthfeel is rich but not as rich as the aroma lets on to be - essentially tastes like a really nice, quality honey mead. I keep going back to just inhaling the nose as it continues to open with flavors of cinnamon, rich pastry, melted banana pie, vanilla, maple and spices. I swear you can almost get an almost toasted bread-y, egg-badder character singular to that breakfast/brunch platter of french toast. Truly a wonderful liquid, thanks again Vin. Flavor is just like the aroma and I am besides myself with the flavor profile. Mouthfeel is fuller with the bready/ dough body giving a fuller mouthfeel. Maple syrupy like feelings. The cinnamon and banana is crazy. I am a pretty hard person to impress at this point in my Mead/beer/ cider tasting. This is insanely good and have so much flavor I don’t even taste any honey. Really something different, well done!

Still mead, 2012 bottle. Crystal clear pale yellow pour. Bottle all to myself! Amazing nose on this. Right up there with my most memorable aroma experiences: New Glarus Very Sour Blackberry and Goose Island 2013 Proprietors. Honey quickly moves to cinnamon and vanilla with bourbon and banana on the back end. Taste is really nice as well, but damn, that nose is something to experience.
