Pours a clear yellow. Aroma is honey, apple, and light oak. Flavor is funky and good. The Brett stands out providing a nice tartness which strips the sweetness from the honey, though the honey essence is still there. Light oak notes and hints of vanilla cut through light citrus notes. It’s sparkling and light on the tongue. I like the fruited versions better but I am glad this base was bottled to give us a taste of the funky mead in its true form.

Kiss of orange, lemon, and dry bretty dust. Mellow honey sweetness, kiss of apple. Initial is gentle spritzy carbonation, light bodied, some apple, dryness. Kiss of honey. Gentle spritzy bubbles, grass, and lemon. Some gentle brett, some funk, dust. Gentle grass and florals. Middle is gentle apple, touch of tartness. Gentle spritzy, a touch acidic or harsh at times. Bretty and a touch tart. Backend and finish is mellow dryness, lingering honey, florals. Some tartness from the wild yeast, a bit tart, dry. Some mellow sweetness. Nice. Bottle shared by Drew a while back, thanks! (as parlimead funkadelish mothership). Pours a deep gold, sparkling. Nose is soft honey and acidity, floral. The Brett kind of adds an earthiness that would be better off removed. On tasting, medium dry, light sweetness on finish. Honey. Earthy yeast. Okay but fruit makes this so much better.

3oz pour at the Kuhnhenn Brew Pub. Poured a light and clear yellow color with no head. Honey and woody. Slight funkiness.
