’A taste of Québec’s winter... and warmth! Dégel is the product of the sugars still held captive in the ice that is at the origin of Neige, our apple ice wine. When exterior temperatures rise, country steams begin to flow and spring is once again on its way, we transform the apple must’s second run into a fresh and delightfully fruity elixir. Dégel can be enjoyed on its own as an aperitif, or as an accompaniment to white meat or fish. Serve iced.’

Arôme de pomme verte, sec, pas trop amère, pas du tout surette désagréable et surtout le sucré n’est pas agressant. On peut en boire une bouteille sans problème. TRÔNE AU SOMMET!

Pale yellow color. Deep aroma, not yet like an Ice Cider, but seriously close. It has a moderate sweetness, apple juice, the high alcohol content works well with the soft woody tannins.
Very good.

750mL bottle, pours a clear dull blonde with just a few bubbles of head. Aroma brings out semi-sweet apples, butterscotch, and caramelized green apples. Flavour is complex and along the same lines, with semi-sweet apples, butterscotch, alcohol, and caramel. Low residual sugar, but just enough to make this extra palatable. Complex and subtly refined. Excellent.

Bottle at Mondial 2015 with Linh, Ken and Nica. Pours a clear body with light tint of yellow. Mouthfeel is super dry with acidity and notes of white wine, dry champagne, sour green apples and light spice.

Bottle 750ml. Pours clear light yellow with no head. Aroma is of apples, sugar, fruits. Taste is of apples, sugar, alcohol, fruits, tartness. Palate: Medium body. No carbonation. Overall: I think this one is a tad heavy on alcohol. Does not strike me as complex, and too strong to be drinkable. For me its a tad of a "miss" in between the refreshing cider and the complex ice thing.

>> Pours flat, still white wine color. Nose is bright green apple, leafy green grass, chardonnay. Taste is lightly tannic, huge green apple acid, chardonnay white wine, long and robust acid through the finish with powerful crispness. Essentially white wine made from apples.

Bottle (750 ml). My bottle is 10% abv. Clear golden, no head nor lacing. Aroma is fun because it’s really similar to their Neige, but way milder. There’s green apples along with vanilla, light sweetness and honey. Taste is slightly sweet with green apples, honey. wood and vanilla. Alcohol is completely hidden. Light to medium body. Surprisingly refreshing considering the abv. Good!

pours unclear bright golden, no cap, ice-cider-like. green apples along with their semi-sweet fruity esters, woodsy and lightly tannic, doughy and honeyed sugars. flat carbonation, medium body - oily, lightly tart, astringent and semi-sweet finish. refreshing even at this abv - not boozy either. not your classic for sure as it is much closer to apple ice wine. enjoyed!

Blond/jaune et limpide, qui mousse au versage et ça s’évanouit aussitôt. "Normal!" me dis-je. Les odeurs sont de pommes mûries accompagné d’un parfum que dégage un jardin fleuri à l’automne soufflé par une brise fraîche. Son goût, qui alterne entre le sucré et l’acidulé et qui contient des particularités épicées et une agréable touche fruitée. L’arrière-goût est suret sur les bords. Un plaisir pour la bouche. 750 mL bottle courtesy of JulienHuxley. Thanks for this, my 100th cider rating! Pours a clear golden color with no head. Fairly strong legs. Aroma of tart apple juice, mild honey and tannins. A touch of vanilla and smoke. The taste is sweet apples, apple skins, vanilla, tart finish. Medium bodied, slight booze, well balanced. Nice cider.
