Bottle generously shared at a mcberko tasting. I really like this cider! It extends well beyond the apple and reaches transcendence in a form rarely realized in ciders that are not ice ciders. The pour is warm golden bronze, still as promised, and welcoming. I love its complex dryness, its crispness and brightness, all of which makes it supremely drinkable, moreish. It is never sweet but never tart either--the balancing act is lovely. Subtle mustiness yet never chalky, the yuzu/kumquat family of small, friendly citrus, carambola and other innocuous fruit throughout and imparting a holistic quality that transcends fruit in the way a superior white wine would do. Pale blond color. Elegant strong aroma, apples, deep, not far from an Ice Cider (8+). Smooth feeling, medium dry, not carbonated; fairly nice cider flavor, a bit astringent and sour in the finish.
Smells like Ice Cider, tastes like regular simple Cider.
750mL bottle, pours a clear blonde with no head, not even any bubbles. Aroma is complex, with treacle toffee, apples, and a little caramel -- fairly sweet for a cider. Flavour is along the same lines, but less sweet and with more astringency; featuring notes of treacle toffee and caramel apples, with a strange, unpleasant metallic astringency to it. Fairly dry and astringent. Not really digging this.

2 oz sample. Clear pale yellow almost clear gold pour. Aroma is quite winey, stonefruits, apple, light booze, light spicy notes, buttery oak notes. Taste is fruity, lots of stone fruit, white grapes, quite winey, light apple flavor. Palate is med bodied, very dry. pours unclear very pale but bright yellow, no head. lightly sweet red apples, apple sauce, half-baked apples, very floral and citrusy, ginger, unsweetened white grape fruitiness, also some tropical mangoes, orange and citrus peel, woodsy pears, astringent herbs and leather, medium body - very oily; warming if not a bit boozy fruity-floral finish. drinks itself like a fine semi-dry white wine - incredible pairing with smoked salmon and foie gras rillettes. Pours clear blond with no head. Aroma is of apples, sugar. Taste is of apples, sugar, alcohol, tartness, acid. Palate: Medium-full bodied. No carbonation. Overall: Quite good. Not too sweet. Alcohol not well hidden.
Bottle (750 ml). Split 3-ways with the lady and the brother in law.
Appearance: Clear bright pale yellow/hay color.
Aroma: Green apples, chardonnay, light funk, leather, pears and light apricots.
Taste: Moderately acidic. Green apple, white wine, leather, pears, apricots and hints of ashes.
Palate: Medium body. Still. Bone dry finish.
Overall: Quite similar to a good white wine. Easy to drink. Alcohol is really well hidden, so it’s dangerously drinkable for an 12.8 % abv beverage. Delicious stuff!
