COMMERCIAL DESCRIPTION
Produced since 1994, Neige Première is the leading inspiration of La Face Cachée de la Pomme. It is the very first ice cider (also known as apple ice wine) to be commercialized in Québec and throughout the world.

In the fall, very ripe apples are picked and stored at cool temperatures until the end of December. Once winter arrives, the fruit is pressed and the juice obtained is placed outside in the intense January cold. During crystallization, the water separates from the sugars by natural cryoconcentration naturelle. After few days of intense cold, concentrated must, representing ¼ of the initial quantity of juice, is collected by gravity. The extracted must is then placed in stainless steel tanks where it ferments at least six months at low temperatures before being bottled.

ABV varies between 10-13% depending on seasonal temperatures.

375 ml bottle. A few years old. Shared at the Expedition Stout Tasting. The cider is a clear gold. Still. The aroma has rich apple pie sweetness with spices and apple skins. Sweet. Slick mouthfeel. Great to sip on.

UPDATED: JAN 12, 2018 500ml bottle at the January DC Ratebeer tasting. Poured a kind of dark, very clear apple juice color. Totally still. Aroma was a blast dry, sweet, boozy apple skins. Smooth apple notes. Some brandy. Apple skin. Smooth, hot, but pleasant as it's consumed. Really nice, smooth character.

375ml bottle @ home. Vintage 2012. Pours a clear golden copper colour with no head. Nose is cooked apples with hints of spices. Flavour is candied citrus, fruits, and primarily apples, some bitter skins on the finish. Delicious!

50ml bottle from kanata.fr. Dark amber colour with no head. Big rich sweet stewed red apples, big runny honey, red apple peel, apple pie, brown sugar. Super heavy and syrupy. Delicious, my first ice cider.

Wow damn everything about this is excellent from presentation, the narrow bottle is gorgeous, to taste. Wow this is a good one. Totally deserves the high ratings. Very sweet but balanced flavor with some fruityness that isn't apple but baked goods like. Super tasty would drink again in a heartbeat.

Bottle. Pours clear shiny amber. Aroma is dried apple rings, pear, honey. Body is heavy, strongly sweet but counterbalanced incredibly well by a nice acidity. Flat, oily, pure nectar. Long sweet apple palate. Incredibly balanced and drinkable, super strong and intense flavours. An outstanding beverage!

2012 vintage. Fermented apple, red apple skin, some boozy fruit juice. Sweet, syrupy, sticky, light apple seed bitterness, red apple skin with light tartness. Really sweet and tasty but it lacks complexity.

UPDATED: JUL 22, 2017 Bottle. Pours a clear golden beer without any head on top. Aroma of sweet nothingness, light apple, light booze. Flavor is sweet, light watery, less sticky than the rest of the ice ciders. Flavor is also less complex, less juicy. Very light sparkle in the background. Nice.

Tasting at the DC Ratebeer cider/mead tasting at Radagast’s, then a bottle brought back from the NE from my gf. Golden heaven juice. Full apples and honey, mild spice. Nothing contrived, not too sweet or heavy, just awesome. Love this.
