Produced since 1994, Neige Première is the leading inspiration of La Face Cachée de la Pomme. It is the very first ice cider (also known as apple ice wine) to be commercialized in Québec and throughout the world.

In the fall, very ripe apples are picked and stored at cool temperatures until the end of December. Once winter arrives, the fruit is pressed and the juice obtained is placed outside in the intense January cold. During crystallization, the water separates from the sugars by natural cryoconcentration naturelle. After few days of intense cold, concentrated must, representing ¼ of the initial quantity of juice, is collected by gravity. The extracted must is then placed in stainless steel tanks where it ferments at least six months at low temperatures before being bottled.

ABV varies between 10-13% depending on seasonal temperatures.

Honey like Amber appearance. Strong concentrated apple and some honey sweetness on the nose. Slightly syrupy body gives a sweet apple flavour light spice component suggests cinnamon and clove. Am I imagining that? ---Rated via Beer Buddy for iPhone

375ml boxed slender bottle, ¿2014 Vintage, kindly hauled by bursprak to the Aarhus Belgisk Blåmuslinger Tasting, 08/2015. - luminous honey, treacling pour, no head. Sensationally rich nose of organic cinnamon&vanilla-doused fresh oven baked apple pie with textured sour apple chunks, a wild apple peel touch, wild autumn apples yet to be harvested lying await in the pastured fields, topped by a gorgeous juicy acidity. - Taste starts off sweet and condensed like apple sirup, before turning into a mellifluous layered texture of fruity-sweet and fruity-sour, revealing it seems nothing but the hidden autumn essence of apples, while leaving room for a couple of slices of pear: near-almond, nutty sweetness, apple butter on Honigbrot, - then a natural version of a Haribo apple rings acidity, rounding it off. - Mouthfeel is lusciously balanced, avoiding cloying sweetness, ensuring savoury stickiness, coating the palate in vivid nectar. - A dense cryconcentration of "appleness", in the same rich tactile sense that Eisbocks are the black hole pinnacle of lager culture and Cantillon FouFoune is a cubist deconstruction of an apricot.
