COMMERCIAL DESCRIPTION
Produced since 1994, Neige Première is the leading inspiration of La Face Cachée de la Pomme. It is the very first ice cider (also known as apple ice wine) to be commercialized in Québec and throughout the world.

In the fall, very ripe apples are picked and stored at cool temperatures until the end of December. Once winter arrives, the fruit is pressed and the juice obtained is placed outside in the intense January cold. During crystallization, the water separates from the sugars by natural cryoconcentration naturelle. After few days of intense cold, concentrated must, representing ¼ of the initial quantity of juice, is collected by gravity. The extracted must is then placed in stainless steel tanks where it ferments at least six months at low temperatures before being bottled.

ABV varies between 10-13% depending on seasonal temperatures.

[ Vintage 2006 ]. Clear medium yellow orange color with virtually none head. Aroma is apple, wood , rubber, gum. Flavor is heavy sweet and moderate acidic - bitter with a long duration. Body is medium to full, texture is syrupy - oily, carbonation is flat, finish is light alcoholic. [20090114]

RB#5400: 5 cL bottle, thanks to Ungstrup. Pours clear and deep golden yellow to orange, no head. Dense apple aroma, sweet and phenol at once - almost mead like. Flavour starts sweet and reveals a solid apple authentic flavour with load of floral elements and phenol. Smooth and warming at once, light sugarish. Citric into the finish - light shivering :)

A dark orange cider with no head. The aroma contains lots of apples, but also a slight hint of alcohol. The flavor is wonderful, sugar sweet with strong notes of apples, and a rather dry end. The sourness from the apples bites the tongue slightly.

UPDATED: JAN 18, 2008 Bottle. Clear golden coloured with a small white head. Sweet aroma of apples and almonds with a light acidity and notes of wood. Sweet flavour of apples and almonds with some acidity and notes of wood and alcohol. Very nice.

[email protected] Golden colour, no head. Aroma is white wine, grapes, a lot of vanilla as well as some sour apples. Flavour is sweet sugary mixed with white wine. Mindblowing complexity, even though the sugary notes are a bit too sweet.

UPDATED: MAR 6, 2015 Bottle at EBF ... One of the Mikkeller gang brougth this... And my thanks to one and all for allowing me to sneak in and try this... This could well be my Highlight of the Festival Pale Pale Pale yellow .. stunningly sweet apple nose ... "Bramly apple pie just like Mummy used to make"... Oh the flavour in intense... sweet insane apples ....

Bottle at Mes Tasting. Pours clear, rich gold. Huge, rich apple sauce aroma. Quite sweet, lots of apples, caramelized sugar, tons of apple sauce, very mild booze. Full in body, no carbonation, a touch syrupy. Somewhat warming on the finish with more apple sauce, spices, crumb cake. Delicious, potent, wonderful.
