COMMERCIAL DESCRIPTION
In the fall, very ripe apples are hand picked and stored at cool temperatures until the end of December. Once winter arrives, the fruit is pressed and the juice obtained is placed outside in the intense January cold. During crystallization, the water separates from the sugars by NATURAL CRYOCONCENTRATION. After few days of intense cold, concentrated must, representing 1/5 of the initial quantity of juice, is collected by gravity. The must is then placed in OAK barrels where it ferments for at least eight months at low temperatures. Raised on lees for 4 months in barrels, it was then assembled and bottled.

[ Trade by asheft ].Clear medium orange color with virtually none head. Aroma is moderate to heavy apple, wood, and apple, aroma is so intense. Flavor is heavy sweet and light to moderate acidic with a long long long duration, intense apples. Body is medium to full, texture is oily, carbonation is flat, finish feel is light moderate alcohol. From bottle as Neige Éternelle, courtesy of fiulijn. Pours clear and golden orange, no head. Light curtains on the glass when swirled. Aroma is dense apples, sweet, light sugarish and with a mild acidic touch. Mild citric, sweet, dense apple and smooth. Velvet. Goes into a sweet, smooth and yet light crisp citric touch into the finish.

Bottled. An amber ice cider with no head. The aroma has notes of apples, sirup, alcohol. The flavor is sweet alcohol, apples, spices, and sirup, leading to a dry alcoholic finish. Thanks fiulijn for sharing.

Bottled, thanks fiulijn! My god, the aroma of green apples is so concentrated! Sweet and intense, hazy golden without head. Viscous with green apple concentrate and lemon peels. Warming syrupy finish. Amazing!

Pefect balance of sugars and acids.

Gold color; it pours viscous. Deep, warming aroma of apples and stewed apples, with light citrus acidity, English apple pie, mature pineapple, and a trace of hazelnuts. Thick body, velvety mouthfeel; powerful and syrupy apple juice flavor, with just accents of caramelization; there is a high acidity that perfectly balances the sugars, a touch of pineapple too, and the delicate fruitiness of ripe strawberries; complex and balanced. The final is warming, sweet, acidic, long.
Excellent.

Rating #8000. Nose brings out toffee, caramelized apples, and bready apple pie. Flavour is wonderfully complex, with notes of caramelized apples, toffee, bready notes, and light oak. Very silky, viscous and warming. Everything is in perfect proportion. The complexity is through the roof. Certainly an elegant ice cider.

Dull golden colour w legs. Brown sugar and apple aroma. Big spicy, alive flavour. Rich, delicious complexity of sugars, apples and spices. One of my favourites. The oak really draws out flavour and complexity in the finish.

Bottle @ Mondial des Cidres de Glace 2015. Light amber colored pour with sticky legs. Juicy stone fruit and apple on the nose. Great caramel, some maple, and tons of vanilla. Slight oak, some fruit skins, and pear. The flavor is just super juicy and fruity. Great acidity as well. Sweet vanilla, caramel, and a hint of maple. Another very well done product from La Face Cachée de la Pomme.

Bottle - Reserve 2009 - Cooked sweet nice apples. Clear orange. Very nice, rich sweet cooked apples with almost no acidity. Balanced well and very pleasant.
