Bottle. Pours a mostly clear dark amber to brown body with a nice one finger frothy beige head that retained really well due to a combination of the high carbonation and the Chimay chalice it was poured in. The nose is super rich and thick with loads of dark fruit, just a light woodiness, and a very vinous quality. Just a slight hint of alcohol along with a sweet almost marshmallow like note. The flavor is really rich as well with a really well mellowed and integrated complexity. The maltiness is really soft and yet still quite chewy and full. Full of ripe dark fruits and a really well done yeast profile. The oak is really feel done as well, remaining in the background and coming out as only an accent on the finish, it’s not tannic or biting at all. The alcohol is very well hidden as well, it provides just a slight warming sensation on the finish. The body is ultra smooth and has just the right amount of carbonation to keep it a bit lively on the tongue. This is one of the best Quads that I’ve ever had. It has all the best qualities of a traditional Quad, but that little something unique from the barrel aging to keep it from being average. I really have to wonder how the other batches are, is it just this batch that’s so good? Is it the age that has made it so good? I need to seek out more of these! Pours a deep amber colour with a white head. Aroma of sweet caramel, alcohol and sweet vanilla and oak. Flavour of caramel malts, vanilla, sweet berries and big smooth oak. Good ripe fruitiness. Medium bodied, smooth mouthfeel and a warming, fruity and oak dry finish. Good.

Aroma is perfume-like with plastic glue, alcohol and some floral notes. Flavour has oaky notes with toffee and vanilla. Some warming alcohol in the finish. Decent, worse than the original.

Bottled on 07/10 - Pours dark orange/reddish brown with a small foamy head. Aroma of malts, ripe fruits and notes of glue and raisin. Taste is quite malty and sweet with notes of glue, vanilla and hints of oak. Finish is sweet and fruity with hints of alcohol and vanilla. A bit unbalanced.

Amber-copper color with small head. Aroma has ripe fruits, mild vanilla notes, oak, goose berry bush and some earth notes. Flavour of sour ripe fruits, vanilla, liquorice, malts and some caramel. A bit better than on previous taste, but the oak doesn’t quite fit still.

Pours amber color with medium head. Aroma of ripe fruits, caramel, malts, sugar candy and yeast. Flavor of sugar candy, caramel, malts, ripe fruits and wood. Very disappointing.

[ Side by Side tasting of batch # 1-2-3-4 ]. Clear medium to dark amber colour with a average to large, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate malty, caramel, licorice - konfekt, light wood and alcohol, toffee notes. Flavour is moderate to light heavy sweet and bitter with a long duration, caramel, malty, wood - oak, alcohol notes. Body is medium, texture is oily, carbonation is soft, finish feel is light alcoholic. 
Sampled at 2011 Cajun Cafe Fall Beer Fest (decided batch # based on the bottle pic). Pours a red-brown with an off-white head. Nose is sweet malts, candy sugar, light wood, and some fruit- plums maybe? Flavor is similar with the oak seemingly stomping on some of the quad notes. Big oak aroma. Vanilla, butter, caramel. Green apple.
Smooth, silky, oily palate. Big oak flavor, vanilla, caramel. Nice and smooth.
