750 ml bottle, dated 2007, sampled 6/7/09. Very pale straw colour with a mostly diminishing fizzy white head. Apple, light floral, and faint honey aroma. Quite dry apples and skins flavour, just a touch of sweetness then a dry, lightly earthy finish. Light bodied, low sparkle, dry, refreshing mouthfeel. A nice dry French-style cider.

750ml cage n’ cork. Pours a bright, light golden colour with an initial frothy head that lasts about 2 seconds. Apples and yeast on the nose with a candied edge. Highly carbonated. 750ml bottle (green I think). 2007 vintage consumed in May 2011. Poured a very pale champagne yellow. Thin collar of bubbles in the glass. Pretty dry with tart apple skin notes and a bit of a vanilla note. Crisp and effervescent, overall a nice organic, sparkling cider. June 18, 2010. 750ml bottle shared by jerc & mabel with me, blankboy and gregclow. Light, bubbly, clear gold with a quickly diminishing fizzy white head. Dry, initially slightly fusel/boozy aroma, settling into an acceptable ripe Mac/Spy apple with a hint of dry oak. The taste - alcohol is just right, not harsh at all, just a simple flavour of slightly overripe golden delicious with a hint of barrel to it. Light and lively on the palate, a very welcome and refreshing hint of acidity, not too strong and definitely not too sweet - beats most sparkling wines hands-down for refreshing, easy-drinking pleasure. Slightly hazy golden pour. The aroma is lovely. Softly spicy, appley aroma with a little bit of light lactic character. There is a very subtle apple skin character that adds a nice chewy bit of body. The palate is soft and dry, despite the touch of soft yeasty character that adds a kiss of light breadiness. Great stuff.

Bottle [750ml] shared with HogTownHarry, GregClow, jerc & mabel -- c/o j&m. 2008 vintage. Pours a clear, supper fizzy and bubbly pale gold with a fast diminishing fizzy white head. Aroma of apples, white wine, some light sweetness and a touch of funkyness. Nice dry flavour of lightly sweet apples, reminds me somewhat of a sparkling wine. Average bodied. [2905-20100618] 750mL bottle. Apple wood aroma has a hint of sweet blossoms. Clear, yellow green body with a quick foaming white head. Dry apple flavour has mild potato skins and a urinal cake-like aftertaste. Medium body is quite bubbly. Odd.

2010-06-18. Crisp yellow body, headless but effervescent. Muted apple must in the aroma. 6+ Flavour is dry, and does not feature a whole lot of apple character at first, very dry fruit character in the finish. 6+ Average palate is quite effervescent. Very much like a dry, musty sparkling wine. Not necessarily what I am looking for in a cider, but I would choose this over many of the sparkling wines available in the LCBO. Slightly hazy straw colour, with a big white head that fades quickly. Smells apply and lightly acidic, with musty tones over top. Could be stronger, but the elements are good. Taste is a letdown, really. Very mild, though it improves as the cider warms. Still, never really rises above being a decent quaffer.
