A Unique Dry-Hopped Sweet Tart Sour Mash Ale

We soured the wort on the Hot Side with Lactobacillus for a few days and then brewed up this smooth and hoppy sour. It tastes like a big bowl of fruity candy or some chewable flavored vitamins, but what’s the difference? It’s sweet, tart, and sassy, just like the tasty cherry pie that your favorite aunt makes. For all the Aunt Sally’s out there, You know who you are...

You remember it like it was yesterday. The beer flowed like music. The music was all that mattered. What mattered most was that nothing else mattered at all and the world outside fell away as a dream disappears upon waking, ephemeral and vaporous. You cradled her in your hand, lips trembling, her citrus suchness a swarm of expectation in your mind, her carbonate beauty as satisfying as it was overwhelming. You were new to this dance but she was not. Taking her in completely she seized your senses and you were consumed by the luminous passion, her residual sweetness, and the tart earthiness of her grin... This brew is dedicated to the real Aunt Sally. You know who you are. And you know why.

Bottle. Pours a slightly hazy yellow golden color with a small white head. Has a fruity malty weak sour tart aroma. Fruity malty sour tart citrus flavor. Has a fruity sour tart citrus finish.

Bottled, from Systembolaget. Clear golden, rich firm head. Lemony apricot aroma. Mid sweet with distinct tartness. Medium bodied with rounded mouthfeel. Tart apricots, lillies and citric acid. Mid bitter finish.

On tap at Elizabeth Station, pours a clear golden yellow with a small white head. Aroma brings out lots of lactic notes and light barnyard funkiness. Flavour is aggressive, with lots of lacto, barnyard funk, and loads of citrus. Rather acidic but not in a detracting way. Well-balanced. Really good.

Draught @ Ballard. Light gold, light Brett, blueberry and gooseberry. Tart, brett, just a lot of berryish, maybe a bit sweet but I kind of like this balance.

On tap @ Taps on 10th Beer Fest. Clear straw colored beer with a thin white head. Kind of surprised to see people like this one so much. To me, just tastes like lemon juice, green apple, and yogurt. Has some lemongrass, I guess. Maybe some citrusy and "herbal" hops, but it’s also kind of metallic. Just not a fan of this one.

Draft - Lots of soured lemon notes and some grass. Clear gold with a rich white head. Tons of sweet citrus, grapefruit, passion fruit and juicy hops. Lots of acidity, which if dialled back would have made this great.

Bottle from Total Wine in Sacramento, CA. Pours pale gold with a large white head. Aroma is sour/earthy/citrus. Med body or so. Flavor is sort of earthy/tart with some citrus. Flavor is strong. Mouth assaulting. It’s so dry it’s almost astringent. Quite a good drink.

Bottle poured a clear gold with a lingering ring of white foam. Aromas of straw, fruitiness, dankness, lemon zest and light barnyard funk. Palate was light bodied and crisp with a dty tart finish. Flavors of straw, lemon zest, yeast and light funk with a crisp dry tart lingering funky citrus finish.
