Willett Whiskey Barrel-Aged Imperial Stout

A Big, Dark, and Scary Barrel-Aged Beast

Our friends over at Kentucky’s own Willett Distillery have one kind of barrel: wood. And they put two things in them: Bourbon and Rye. We were fortunate enough to get some of their Rye barrels, and we put our Imperial Stout in them. It’s a chocolatey, coffee-y, smoky, Bourbon-y beast of a barrel-aged thing. Word.

12 oz. bottle via trade. Pours a deep, dark, opaque coffee brown with a small beige head that settles into a ring and thin island of film, leaving some sloppy ropes of lace in the glass. Notes of charred oak, rye whiskey, brown sugar, vanilla, caramel and chocolate and roasted malts, earth, toasted marshmallow, and subtle spice. Medium-bodied, with moderate to medium carbonation and a sweet, toasty, warming mouthfeel. The rye is a different element than straight bourbon and I forgot that’s what this was. And I need to get a super fresh one next time. But it’s good and unique in a market full of BA adjunct stouts.

4/19/2018 (12 fl oz bottle): Really nice bourbon aroma with some chocolate and hints of coffee, vanilla, and char; dark brown color, minimal tan-colored head; flavor has coffee/coffee grounds up front followed by warm bourbon, vanilla char, caramel, with char and alcohol in the finish; medium to medium-full body, smooth, calm carbonation; very good overall, but the coffee/coffee grounds seem to come through more in this over the "High-Westified" version,

Draft - Coffee and nice barrel notes. Jet brown with almost no head. Nice coffee, bourbon notes with a nice long finish.

On tap at Town Hall. Pours near black with a brown head that dissipates to the edges. Aroma has lots of bourbon with strong coffee and dark grains and roasted malts supporting. Flavor has bitter dark grains, coffee and bourbon with a hint of roast underlying.

Decent Impy, rich and complex. Keg at CBR18, Shoreditch.

Draft. Black beer with a tan head. Whiskey and coffee aroma. Whiskey and bourbon flavor with caramel and light coffee. Medium-plus bodied. Caramel and light coffee linger with whiskey/bourbon.

On Tap Black with a thin tan head. Dark roast and boozy bourbon aromas and flavors. Plenty of sweetness but still well attenuated. Lingering dark roast caramelized sweetness and a long lingering ABV burn. Very good.
