We’re no monks, but our Belgian-style IPA gives a tip of the hat to our divine brethren. Brewed with rich malt, noble hops, Trappist yeast and a kick of coriander, this is one complex beer. Hop Trapp pours with a refined bitter backbone, floral hoppy notes and a decidedly Belgian finish. This brew is worthy of some serious contemplation.

12oz bottle. Pours orange-amber with a moderate off-white head. Aroma is Belgian yeast, spice, light citrus, pear, caramel, toast, light floral hops, and coriander. Taste is Belgian yeast, caramel, spice, pear, wood, some earth, soft citrus (grapefruit, I think? but with some lighter, like nectarine, too), and very light pine. Big coriander finish with a little resulting bitterness. Musty yeast lingers. Disappointing finish. Medium body. Average carbonation. Oily mouthfeel. Messy finish but enjoyable overall - largely because it loses a lot of the IPA elements to the yeast.

Bottle. Orange, sugar, yeast, caramel malt and grapefruit peel aroma. Amber with large light tan head. Moderately sweet orange, candied sugar/caramel malt, and moderately bitter pine/grapefruit peel flavor. Nice body. Pleasant - very sweet for an IPA.

Bottle @ Elegante DAL. Aroma is pear, and a little bitterness. Cloudy, Orangish amber color with this off white head that lingers, a little lacing. Flavor is a little pear too, Belgian character from yeast, coriander. Enough bitterness to be an IPA, but not too much. Med body, smooth mouthfeel. Overall, a nice IPA with Belgian twist.

Draught at City Tavern in Dallas. Slightly hazy orange-amber with creamy vanilla head that sustains as a small coating of bubbles and patterns down glass. Slight honey and flora aspects. A little papery. Slight Belgian funk seems a little off with the malt and hops. Tough style to hit.

Keg at DFW Airport. Almost clear amber, creamy head. Perfumy pear and marzipan aroma. Mid sweet with medium-full body and dense, rounded mouthfeel. A bit caramelly with dough and marzipan, some pear and elderflowers. Long really bitter finish.
