Bière brassée la nuit de Samhain
Des quatres grandes fêtes annuelles celtiques, SAMHAIN est sans aucun doute la plus importante. Cette fameuse nuit du 31 octobre au 1er novembre est, en effet, hors du temps : ne faisant partie ni de l’année écoulée, ni de l’année à venir... puisque c’est bien de cela qu’il s’agit : la nuit du nouvel an celtique !

Nous avons voulu faire renaître ce moment capital pour les Celtes, cet instant magique où chaque chose réalisée tient du mythe. Nous avons décidé de créer une bière unique brassée exclusivement entre le coucher et le lever du soleil de cette nuit exceptionnelle. Cette bière de Samhain fera tout naturellement XI.I% alcool (11ème mois, 1er jour) ce qui contribuera à réchauffer nos coeurs cet hiver !

Bottle thx to Sune. Hazy and dark brown in colour with a rather large head. Has kind of a belgian feel to it more than barly wine. Quite malty and sweet with notes of nuts, caramel, spices and yeast.

Bottle at home, 17th December 16. Pours a dark cararmel copper colour. Aroma is caramel, dark sugar, mollasses, rich dark fruit. Taste is caramel, molasses, creme brûlée topping, with a burnt sugar bitterness, never too sweet and previously mentioned similar to T IJ Struiss. Lovely stuff

Dark fruits, caramel, roasted notes, thin beige head, medium/full body, law/medium carbonation, taste of dark fruits, alcohol is well hidden...a very good and strong surprise.

UPDATED: DEC 12, 2016 Aroma: caramel, chocolate, coffee, roasty, yeast, maybe some faint vanilla ; Appearance: slightly hasy black, brownish/tan foam, minimal to no head ; Taste: medium sweetness, lightly bitter, lightly sour ; Palate: full body, slightly oily feel, very low carbonation, long finish. One of my first "special" beers, and still a favorite. Each year, the newly brewed batch tastes different. My favorite is the "infamous" 2012 one (they made mistakes during the brewing procedure, but got an even better result, IMO). Can be kept for 5 years (in good conditions)

UPDATED: OCT 21, 2016 Sampled from bottle at deanso’s. Vintage 2012. Bottle courtesy of deanso. Clear chestnut with no head. Sweet chocolate malts and barley, chestnuts. Big sweet, mild bitter. Medium body, soft carbonation. Syruppy sweet sticky, quite alcoholic, nice rounded.

Bottle thanks to deanso 2012 vintage. Clear mahogany with very short lasting beige head. Lots of sugar, light flowers, raisins, light caramel, soft sherry notes, some grassy and alcohol in the finish. Very sweet with some alcoholic bitterness. Over medium bodied with slick feel. Nice for the style.

Pours a very dark brown with a low tan head. Aromas of roasted malts, brown sugar, molasses, raisins, chocolate, rich dark bread. Taste is quite sweet and musky with a slight alcohol burn. Mouthfeel is slightly oily with medium body and carbonation.

Bottle, 33cL. Home. Christmas gift. A dark sparkling brown beer with a big beige foamy head ; good retention ; good lacing. Roast, toast, prune, fig, alcohol. Medium sweet, round, nice warming background, light dry refreshing. Full body, average to light oily texture, average carbonation, sweet light warming finish. Overall, a good one ! Nice roasty fruity aroma, sweet, round, warming, very drinkable.

Bottiglia, 33 cl. Scura, scurissima, con schiuma beige che scompare poco dopo lo sbicchieramento. Al naso caramello, prugna e forse un pò di liquirizia. In bocca è elegante e rotonda, caramello e malto.

33cl bottle, bought over a year ago in Lille, but brewed in 2011, so by now about 4 years old. Color is as good as black. Head is beige, but quickly disappears completely. Aroma’s of caramel, burnt sugar, dried fruit. Retronasal it’s sweet, burnt sugar, dried fruit. Flavor is heavy sweet. Medium bodied. Flavors linger, but no new flavors. Nice enough, if you’re in the mood for sweet.
