At just on cool and into a snifter. Honey amber in colour and donned by a thin cap of dense white foam. Heavy sediment has left it hazy and the carbonation is very fine. Nose is dominated by hints of toasted malts, honey, fresh baked brioche, yeast and sourdough - a veritable baker’s loft. On the palate it is slightly lactic, milky and sour with a prominent white grape astringency to the finish. Very light in body and carbonation. Finish is of sour malt with a slight dustiness to it and hint of honey. Sweet start is almost artificial and medicinal. Alcohol has faded to leave a little void in the finish. Strangely ’Faro’ like as it tastes like a sweetened sour ale. Very strange but drinkable Bière de Garde. After four years in the bottle I guess a fresh sample would be good to compare.
