La Triple d’abbaye, popularisée depuis des décennies par les moines Trappistes, est l’une des plus puissantes, élégantes et redoutables bières provenant de Belgique. Nous brassons la nôtre avec une levure belge qui apporte des esters fruités ainsi qu’un côté épicé subtil sur une finale sèche. Cette bière étant parfaite pour notre série en barrique, nous avons décidé de la faire vieillir dans des barils de vins rouges, avec une levure sauvage du type Brettanomyces. Espérons que vous l’accueillerez à bras ouverts dans votre sanctuaire. /////////The Abbey Tripel, popularized for decades by Trappist breweries, is one of the strongest, and most elegant beer styles to come from Belgium. We brewed ours with organic malts and a Belgian yeast strain that contributes fruity esters and subtle spicy phenolics. A perfect fit for our barrel-aging program, the beer gained additional dryness and complexity through extended aging in red wine barrels with wild Brettanomyces yeasts. Here’s hoping you’ll enjoy it as a part of your own personal sanctuary.

Hazy, darker amber, has a hit of brett, nice pale malt character, the tripel sweetness is good, balanced, that touch of brett lending liveliness to the finish.

Draft - Funky Brett notes. Clear gold with a decent white head. Wine barrel notes, Brett funk and a dry finish. Complex and nice.

On tap at Farmhouse Fest, pours a hazy golden with a small white head. Aroma brings out wild yeast character and a touch of vinous character. Flavour is along the same lines, with tons of brett, light vinous character and wild yeast. Very funky, with a bit of tannin character.

Bottle from halles de st-Jean thx Alex for buying. A: red wine aroma, fruity brett, a touch leathery, a bit of cheddar that has been refined with wine, subtle spices. App: hazy copper sparing white head. Some lacing. T/p: med body with light acidic finish. Soft carbonation. O: Pretty nice. It’s been a while since I last had it. Really enjoyed the barrel aging on this it gives a nice depth to the brew.

Draft at Vices et Versa. Pours clear deep gold with a white head. Aroma of fruit, red wine, brett and oak. Taste is tropical fruit, wine, brett, oak, spice, yeast. Excellent.

Hazy dark orange, with a large off white head. Aroma is is very woody, and very vinous. The brett is giving off huge tropical fruit. Lots of mango, melon and a lot of stone fruit. The fruit mingles well with the copious amounts of Belgian, yeasty esters, crackery, pale malts. Super complex ale, with a very soft carb and and a full mouth feel. The finish is very vinous, woody notes of barrel, white wine, and tropical fruit from the brett. Funky, and tart finish, truly a beer/wine hybrid. Nice stuff.

Stoned99 (1578) - St-Jean-sur-Richelieu, Quebec, CANADA - MAY 19, 2017
500ml bottle. Aroma: nice mix of red fruits, funky bretts, subtle spices. App: golden / reddish with small white head leaving bubbly lacing. Taste and palate: medium body, fruity but way less than in the aroma, medium sweetness, acidity and bitter finish. Overall: really enjoyed the nose, like a lot. But thought the taste was lacking a bit. Same for the palate. Missing this little kick so I appreciate it a bit more. Maybe was made too much in finesse? This is still really easy to drink, don’t get me wrong and I enjoyed every inhalation. A good beer from Le Castor.

Bottle (500 ml) at home, split 2-ways. Slightly hazy bright orangey-golden with a medium white head, moderate retention, leaving little lacing. Aroma is leave no doubt about the brettanomyces presence in there, the red wine is there as well, there’s some belgian yest spiciness, red fruits and alcohol. Taste is also brettanomyces and red wine forward with a good malt backbone, Belgian yeast, red fruits, alcohol, peppery notes and light herbalness. Medium body. Moderate carbonation. A bit oaky mouthfeel. Soft red wine finish with brettanomyces and moderate alcohol warmth. This is much better than last year version. The brettanomyces presence is strong and suits the red wine and Belgian profile. The alcohol is definitely noticeable, but also well integrated and providing just the right amount of warmth. Very good!
