Brought this bottle back from Quebec and managed not to drink it for almost three months until I could get with some friends to open her up. Slightly hazy yellow color with a decent head. Big earthy funky aromas with just a touch of brett character. The saison is slowly disappearing as a wild ale is starting to come about. The wood and the wine come off as subtle background notes and add some nice complexity. Somewhat different, but a great complex well made brew.

Cette bière m’a été offerte en cadeau. Quel choix lumineux ! J’y vais d’une description simplement de mémoire. Arômes complexes de pêche, vin blanc, bois. En bouche c’est encore plus complexe, mais absolument équilibré et surtout, absolument délicieux. Fruitée, boisée, maltée, houblonnée et légèrement acidulée. Chaque gorgée est un pur plaisir et une découverte. Quelle à été ma déception lorsque j’ai tenté de remplir mon verre pour une dernière fois et de ne voir que quelques gouttes perler au fond de mon verre. Je dois absolument en retrouver et repartager ce plaisir unique.

Poured from an oversize bottle back to back with the base. Pours cloudy amber with a lemon head. Lots of lacing. Aroma is Brett barnyard funk, hay, sour green apple, and spices. Flavour is barnyard Brett, sour grape skin, grapefruit, with a wonderful dry sour finish.

Riche, complexe et équilibré=parfait. Trou du Diable a réussi le tour de force d’accumuler les meilleurs éléments dans la fabrication d’une bière:levures belges (arôme puissant et fruit jaunes), levures sauvages (cuir), houblons (amertume), fût de chêne ( vin, bois, fruit rouge). Au final, le tout est tellement parfait que même mes invités les moins ouverts aux microbrasseries ont aimés. De plus, c’est très riche pour seulement 7% d’alcool, une bière d’été! Un classique que j’ai hâte d’avoir l’occasion de re-boire.

This is a game changer. I can’t imagine a more complex brew. Pours a bright coppery gold with a light carbonation stream and a thick but porous white head. Brilliant appearance with a bunch of lacing blotches appearing later. The aroma is complex and bountiful with tons of beautiful fruit esters and musty brett. Orange peel and lemon zest combine with cracked pepper, coriander and heavy floral hop notes. Moderately sweet, toasted wheat malts, light peppery and earthy spice notes. Lingering musty brett notes, farm house and hairy notes. So complex and constantly evolves as it warms. Medium body with a doughy, basement feeling the pervades the aroma and flavour. Can’t say any more....too much going on.

Clear medium orange yellow color with a average, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate malty, pale malt, horse blanket, tart, grapes, wood, funky, medicine notes. Flavor is moderate sweet and light to moderate acidic with a long duration, tart fruit - grapes, funky, wine, dry. Body is medium, texture is oily to watery, carbonation is lively. [20150620]

750ml bottle from TDD Shop. Aroma: funky farmhouse, red fruits, winey, leather. App: cloudy golden, small creamy white head, nice lacing. Taste and palate: medium body, velvety, soft carbonation but fizzy, light long acidity finish. Overall: as expected this is a masterpiece. So well balanced. Not too sour, not too sweet. Really well done. Can’t think of anything wrong with the palate.
