COMMERCIAL DESCRIPTION
This imperial stout, aged in bourbon barrels, gives notes of roasted malt on a coffee, dark chocolate and caramel background. The velvety palate is sustained by a sagacious amount of alcohol warmth that give this beer the taste and feel of a fine spirit.

Pours a black color with tan head. Aromas of chocolate, caramel, and toffee. Flavors of a typically delicious stout with a bourbon alcoholic backbone.

750ml capped bottle pours black in color with a 2 finger light beige head that leaves some nice lacing on the glass while settling. Aroma is bourbon with some raisin and chocolate. Taste is bourbon with a chocolate malty and raisin sweetness with a moderate alcohol burn in the finish. Would rate even higher with more of a roasted presence, seems just slightly imbalanced towards the sweet side, but tasty nonetheless.

Couleur noir avec un col beige mousseux qui s’estompe assez rapidement. Nez étrange, je ne sais pas si c’est le fut de bourbon mais j’ai jamais senti ça auparavant. Ce n’est pas désagréable mais c’est spécial. En bouche grand mélange de café, chocolat, malt grillé et fut de bourbon. Très liquoreux. Bière très complexe et très spécial unique en sont genre. C’est une réussite, pas tout a fait mon genre je m’attendais de quoi d’autant complexe mais plus standard! A essayer tout de même!

750 mL bottle at a Trou du Diable barrel-aged tasting at Volo, served in a stem glass. Pours Black with small tan head that fades quickly and leaves a trace of lace. On the nose, there are bug notes of molasses, roasted malts and chocolate along with vanilla, anise, herbs and whiskey barrel. The flavour is subtly sweet, with notes of roasted malts and bourbon barrel. The finish is long, with lingering toasty barrel notes and a touch of anise. On the palate it is medium-full in body with a syrupy texture and soft carbonation. Overall, this is a very nice barrel aged imperial stout. Very elegant and smooth, a nice brew for the fireside. 2013-05-25

Backlog time. Rated May 25, 2013 at Volo, bottle. Opaque ruby-black with an incredibly long-lasting tight creamy/foamy tight biege head (4+). Smells a lot like their barley wine - apple must, yeast, light roast, subtle but present alcohol and bourbon/oak - quite dry. Taste - restrained roast, moderate alcohol, light oak - quite floral and airy, quite delicate - maybe a hint of astringency with a medium-quick finish; dry and quite fruity, not boozy at all. And "mabel" saying "haaaaaaaarrrrrrrryyyyyy!" repeatedly while I was dictating too, hmmph.

Pitch black color. Thin brown head. Surprisingly sour nose with lots of roasted malts, very vinous with light bourbon notes. The mouth is superb smooth, tart, vinous, lots of dark fruit. The end falls off quickly, but alcohol is well hidden. Sour with a bit of bourbon in the finish.

750ml bottle from Marché Station 54 shared with brother and father. Aroma: great nose of bourbon, vanilla, chocolate. App: dark brown, burgundy tint, huge off white head, good lacing. Taste and palate: full body, moderate to high carbonation, light sweetness, light bitter and alcohol finish. Overall: aroma is really good. The mouthfeel is ruined by the big carbonation though. Could have been way better than that but I didn’t enjoy the carbonation of this one.

Accents de vanille, chocolat noir et café en olfactif. Touche de cassis de caramel et de mélasse. La torréfaction est discrète mais présente. De couleur noire, à la mousse généreuse, onctueuse et au long maintient. En attaque le Bourbon est très actif; nous donnant des accents de boisé intenses et des notes céréalières, agrémentées d’un caramel enveloppant. L’amertume de torréfaction se combine aux houblons terreux aux tons de vieille branche morte. Un stout classique, beaucoup plus dans l’amertume et l’alcool que dans les sucres. Plaisant.

On tap at barVolo, Toronto. Pours black with little head. Aroma has bourbon and sweet chocolate. Bourbon flavor with cocoa and raisin. Has a spirit-like crispness to it. Fairly tasty.
