(bottle) Clear, golden colour with a blond medium-sized foamy head. Honey-ish malty aroma with grainy spots, backed by flowery, mildly spicy hops and a whiff of barnyard. Mildly bitter and delicately sweet flavour, light to medium bodied with a soft carbonation. Smooth malty base with notes of white bread, traces of honey, mineralic accents and a pleasant, slightly spicy hoppy bite from behind; bitter-sweet, mildly hoppy and mineralic finish. Bottle. Pale golden, white foam. Straw malt, light spongy and broad grassy, herbal hop aroma. Dry minerally, light hay initially, then it broadens out to a elegant sweet chewy malt body. Sparkly, light dry chalky on the palate. A hint salty notes which enhance the hops. Really gets better with every sip, a subtle well-crafted joy. SinH4 (6573) - Garching b. Bottle. Clear pale golden color with creamy white head. Aroma is hay, grassy hops, flowery, dandelion, citrusy, but also with a surprisingly sweet doughy malt base. Taste is noble hops, hay, grass, some lemony, flowery, a bit mineralic, but the malts are still rather juicy. Mouthfeel is soft with natural carbonation. As well made and zezty as a simple Pils can be, this incorporates all the old world hop goodness with a Franconian sweetish softness. Multiple liters during several sessions at the brewpub in Nov. 2015: Rich golden. Thick and creamy white head is mostly lasting. Very clean and focused aromas of lemon balm, fresh-cut hay, minerals, flower nectar, and a hint of rustic Franconian sulfur. Soft, fine-bubbled mouthfeel. Mineral-charged commencement paves a clean path for the snappy and weightless base of baguette and crackers. Exquisitely polished hoppiness unfolds with a lemony vibrancy and a nectary softness. Stiff minerals remain firm and clenching as they’re fortified by woody and herbaceous dimensions. Saliva-inducing hops beckon large gulps as the minerals and refined edgeless malt sharply contrast and dry things out. Lean and immaculate finish features a zesty interplay of minerals and a lemon-herbal scratch, with a flashier lemon balm characteristic lingering. A very stylish and sophisticated pils that’s sublimely synergistic with the extraordinarily pure and mineral-rich water that’s distinctly characteristic of this brewery. Doesn’t quite elicit the goosebumps that Gänstaller Bräu Pils did for me, as the complexity isn’t here, but this is clean as any lager out there and brings to mind Brauerei Witzgall in terms of mineraliness. UPDATED: APR 25, 2016 From bottle and from draft at the brewery. Clear gold with a lasting and creamy white head. Intense Hallertau hop aroma manifests as lemon oil, persimmon, honeysuckle, and dandelion. Malt is crusty baked French baguette, and the mineral water quality is remarkably expressive, maybe the strongest and most enjoyable mineral character that can be found in Upper Franconia. Medium-light body, moderately sweet and perfectly balanced by bitterness, it’s creamy and silky and supple and savory, lightly acidic and wonderfully quenching and demanding of large gulps. Oily and juicy hop oils linger in the mouth, and the baguette malt quality even translates into a sort of intoxicating saltiness. This is world-beater Pilsner, easily one of the best in Franconia and the world as a whole, and may be the best mineral and noble hop expression I’ve ever experienced. Bottle of the Pils and Dunkel are available at the brewery at getränkemarkts in Pegnitz. At the Brauereigasthof you will find the Pils from tap and the Dunkel served from barrel. Both are world class examples of both Franconian character, and Franconian brewing technique.
