COMMERCIAL DESCRIPTION
We drew inspiration from Steve’s Grandmother’s holiday biscotti recipe to create this one of a kind brew. By utilizing an array of malts, oats, wheat, pure local honey, light European hops and delicately spicing with Grains of Paradise, Madagascar vanilla beans, whole star anise, all brought together with traditional Belgian yeast, the result is a cloudy, deep copper colored, complex experience. This delight to the senses should be served in a 12 ounce footed glass and allowed to warm to 50 degrees to fully gather the malt and spice spectrum.

Serving glass: Poured from bottle into Snifter. Appearance: Orangish-red with nice off-white head and some lacing. Aroma: Sweet, fruity (cherry, plum, banana), boozy, and spicy (clove, cardamon). Some light mead-like characteristics. Taste: More muted than the aroma and not as sweet. There are a lot of fruity notes (notably cherry and plum) with strong toasted malts, honey, and lemon pepper from the Grains of Paradise. Some very light Belgian yeast flavors. There are a lot of flavors going on here, but it is all a little muddled other than the Grains of Paradise. Palate: Thick, full body that is somewhat chalky. Pretty dry throughout. Overall: Pretty good, but could certainly use some tweaking to make the flavors stand out more.

Bottle: Reddish orange pour with a thick foamy off white head. aroma is Belgian yeast, honey, light banana, vanilla. A lot more spice and vanilla coming through in the flavour, very sweet. butter cookie, malted wheat. that distinct belgian yeast coming through towards the finish where it leaves with a hint of alc and more spices.

On draught at Stub & Herb’s in Minneapolis, MN. Pours a hazy golden orange brew with a decent off-white head that has some spotty lacing and a thin white ring. Aroma of Belgian yeast, a hint of black licorice, vanilla, banana esters, some toffee and some clove. Taste is medium bodied, with flavors of banana esters, yeast, some cloves, vanilla, a hint of honey and a touch of licorice. Finish has a mild acidic character that leaves behind some honey and mild spice aftertaste.

This could use some refinement, but it is a good start. Licquorice aroma and anise in the flavor. Surprisingly dry, with lots of yeast, good real Belgian character.

Pours hazy yellow with white head, aroma is spicy and sweet. Taste up front is sweet and caramel with some spices, and ends a bit bitter and dry. Not bad, but wouldn’t drink much more of this.

3.5 oz. pour, on tap at the brewery’s taproom in Stillwater, Minnesota. Labeled as "Biscotti," not "Belgian Biscotti." Consumed on 1-29-15. Tangy, malty aroma features a peach scent. Not strong aromatics. Pours a hazy, light brass with a small amount of beige head. Solid, sweet, malty taste. Spicy. Dessert-like yet still somewhat savory. Interesting. Pretty tasty. Dry aftertaste. Medium body. Lively and crisp in the palate. Overall, this is a solid winter beer, subtle yet intriguing.

Gold/Red color with small white head. Hops and fruit on the nose. Interesting flavor...fruity/yeasty and some yeasty taste. A bit of cherry. Smooth and drinkable. Good.

Hazy amber body with a medium, off-white head. Smells quite bready with some spices. Flavor is also bready with a lot of yeast flavor and some spices, cloves, light fruits, and some acidic tastes. Creamy body with light carbonation. Not my favorite but it’s all right.
