COMMERCIAL DESCRIPTION
This is the first batch of beer brewed at Little Fish. It’s always been our mission to brew with local ingredients, and that’s where this beer starts: a saison brewed with one third organic Ohio spelt, and organic malts. Then we aged it with wild yeasts in oak chardonnay wine barrels. This process has added layers of fruitiness and funk that are worth savoring and pondering. These flavors should continue to change and develop if stored at cellar temperature for up to 2 years.

Pair with a range of lighter foods, including grilled fish, pork, and seasonal vegetables. Serve at 45-50 degrees F in a tulip or wine glass.

UPDATED: NOV 19, 2017 Bottle share are RBSG 2017 in Boise. In my tasting glass yellow. White foam. Noes of fruit and funk. Medium body. Flavor is like the aroma...very footy and very funky. Good stuff.

Cloudy, dark golden pour with thick, persistent and creamy off-white foam. Yeasty notes in the nose with floral aspect and some light malt, and some vinous mustiness. Mild woody funkiness in the flavor with a tart, almost tannic fruity note. A complex flavor that balances the fruitiness, perhaps the spelt. The malts are very muted. Medium body, very active fizz, slightly slick to start but dryish at the end. Slightly heavier, slightly earthier than a conventional saison, but distinctively so. There are some complex flavors here that are emerging as it warms. There is a little bit of hop sourness at the end that competes with the dry vinous aspect.

Bottle picked up at the brewery, enjoyed in Colorado over Christmas. Pours a hazy golden orange color with white head. Yeast, wheat, spicy, light white wine aromas. Yeasty, tart, spicy, white wine flavors.

Bottle in Winter Park with jcnielsen. Thanks Justin. Pours a hazy yellow appearance with a white head. Guava, pineapple, lemon fruit notes. Plenty of grass and herbs. Some tartness. Oak, white wine, and vanilla. Interesting but nothing too great.

Non Beer Trip Beer Trip Beer #2. Keg at the brewery. Clear pale golden, large creamy tan head, good retention. Aroma of brett, yeast, pale malt, spice, tannic wine, wood, earth. The taste is citrus, grape, wood, bready malt, yeast. Medium bodied, low carbonation.

It pours hazy yellow with a huge white head. The aroma is very soft and powdery with pale malt and some rustic notes. It has a medium body with lots of gentle prickly carbonation. The beer is pretty delicate and nuanced. The beer has bugs, oak, pepper, stone fruit and minerals. The final has light citrus and some wine notes. Very nice.

Bottle shared by alexsdad06. Poured hazy dark golden color with an average to large frothy white head that was lasting with excellent lacing. Moderate to heavy yeast, spice and sweet wine aroma. Medium to full body with a smooth texture and soft carbonation. Medium to heavy complex spice sweet flavor with a medium to heavy spice sweet finish of moderate to long duration. Solid complex beer.
